I also do a protein shake each morning.  It starts me off right.

How about cubes of tofu with cubes of apple, sprinkle with cinnamon, a splash of cream or milk, sliced almonds,  and sweetner of your choice?  It's like cereal sort of (no carbs) also reminds me of a bowl of oatmeal.  Eat it hot or cold.

Have you tried the cofffee cup cake with 1 egg, 1/4 c almond meal (trader joes), 1 T oil, 1T sweetner of your choice, cocoa (or cinnamon or vanilla or whatever flavoring you like),  Put it in a coffee cup and cook in the microwave for 1 minute.  (maybe longer depending on your micro).  It's fast and easy and full of protein.

Oh, maybe you don't eat eggs?  Do you?

My nutritionist said simple carb digestion happens mostly in our mouths before they even reach our stomachs and that's why you can't get filled up on pretzels or other simple carbs. I didn't realize this but hope you find a good choice for snacks. Have you tried nut cheeses since you are veg that may be a good alternative? I make one with sunflower seeds lemon and garlic it's great on celery or peppers or by itself. Homemade hummus too. Lookup Jamie Eason's Pumpkin Protein Bars- I use blonde coconut sugar instead of the Xylitol and they're really good as well.

Pumpkin Protein Bars ½ C Xylitol Brown Sugar Blend 1 - 4 oz. jar baby food applesauce 2 tsp. ground cinnamon 1 ½ tsp. ground ginger ½ tsp. ground clove 1 tsp. baking powder 1 tsp. baking soda ½ tsp. salt 2 tsp. vanilla extract 4 large egg whites 1 - 15 oz. can of raw pumpkin 2 C oat flour 2 scoops vanilla whey protein ½ cup almond milk ½ C chopped walnuts (optional)   Directions: Preheat the oven to 350. Spray a 9 X 13 Pyrex dish with non-stick spray. Combine first 11 ingredients and mix well. Add the final 3 ingredients (4, if adding walnuts), and mix until incorporated. Spread batter into the Pyrex dish and bake for 30 min. Makes 24 squares.
