Adventures in Maintenance: I Really Can't Eat That Edition

 LOL, you'll get tons of points if you don't give him diabetes first!  He's going to love the menu you have planned.

I have a friend that lives two floors up from me. She's an outrageously good Italian cook.  She had RNY ten years ago and still dumps.  That makes it really easy for her to make sweet treats for her boyfriend because she can't eat them.  Me? Every time I eat a sliver of her blueberry pie, I gain a pound!

You have more willpower than I do if you can pull off that menu!

 You should see the stuff I made last year right after my surgery Lemon butter creme chocolate sandwich cookies, almond cranberry biscotti dipped in white chocolate.  Chocolate coconut filled ravioli.

I'm always making food to give away.  White Chocolate Macadamia Nut cookies, cupcakes, Raspberry pound cake with Moscato cream icing.

For Halloween I am making allspice-nutmeg nougat covered toasted peiptas dipped in white chocolate.  The for Christmas we are making our own candy canes from scratch.

Now that I think about it, I may be personally responsible for increasing levels of Obesity in Tennessee.  

Uh-Oh - forget everything I just said, LOL.  Seriously, I have more fun making the food than eating it.  Even before surgery I never had a sweet tooth, it was the emotional eating that drove me to the large pizza and buttered popcorn every night.

 Sounds like me! Cupcake goddess extraordinaire, making goodies I don't eat.

I also didn't really do sweets before surgery either, give me bread or potatoes and I was happier than a kid on Christmas morning though. 

And Rob, I KNOW I've been responsible for increasing obesity levels at work because of the cupcakes I take in all the time. I feel guilty sometimes, but it's not like I'm forcing anyone... Right?

Bread goes down easy peasy for me. So I'm jealous of you.

Ice cream, on the other hand, makes me feel really really icky. Every. Single. Time. The only ice cream I can tolerate is low carb. This is a very good thing.

 I've been doing frozen greek yogurt for a summer treat lately - have you tried that in lieu of Ice cream?

 I make it myself.  Take some Fage or other fat free greek yogurt and mix it like this:

1 cup yogurt (If you want it extra firm - drain the yogurt through some cheese cloth overnight)
1 teaspoon of hersheys cocoa powder
2 tbspoons ea of whatever sugar free flavor syrups you like (I use almond, caramel, and coconut for my Almond Joy Flavored Ice Cream)
splenda to taste.  Usually about 1/2 a tablespoon for me.

Mix it up really well.  Cover the surface of the yogurt in a bowl for 15-30 minutes in your freezer.  It should be at about soft serve consistency.  If you freeze it longer it will become like a rock but thaws out quickly.  

You can try making it in an ice cream freezer, but you will have to add some fat to it and be very careful.  Yogurt like this freezes VERY quickly and will jam up the paddles on most low end ice cream freezers.

This recipe with FAge 0% will be 140 calories and 24g of protein per cup of yogurt.

I can eat ice cream only if it's hours after food.  I decided that eating it after a meal simulates liquids going down and it gives me the immediate desire to hurl, just like any other beverage does.

Bo bread or ice cream for this girl--ice cream makes my stomach hurt and bread feels like it balls up inside and swells! However, I can eat toast and English muffins. I love Bay's English muffins and usually have one with almond butter for breakfast. I am afraid to try pancakes or waffles lest they feel like bread.

Rob, I used to bake like you before surgery although I didn't make butter from scratch...I do like my time-saving ingredients. Strangely, I don't really miss it.
