Daily Maintenance Weigh In - Wednesday August 8

 I've learned that when I go up like that overnight and after eating out or working out, it is water retention. It usually comes off in a couple of days.

Same. Which is good as didn't go UP. But didn't go DOWN either.

138.5, still holding on to some water. The fireplace is painted. Moving on to the remainder of the kitchen. I used to be able to push a lot more when I was fat (like appliances). It didn''t occur to me that it's harder now because I'm smaller, I just thought I was weaker.

I had one of the first Kindles, it's still going strong although the power cord insulation has peeled off. I'll get a tablet when it finally dies.

148.6 up over a lb overnight, but I don't regret my home-made Thai shrimp soup one bit.. and will be having more today, sodium be damned.

Diane, I'm a total cheater cook!

Backstory, I used to make what my husband lovingly nick-named "noodlemuck" from whatever leftover meats & veggies and cheese were in the fridge, about 1x a week.. all cooked en casserole.. it was almost always super-tasty..

Well, this was "healthified" noodlemuck! Just a quick & easy dinner..

I always have cans of this on hand



love the taste- but it's very, very spicy and incredibly salty, so I always dilute it with broth of one sort or another..

This was thrown together since I had a bunch of button mushrooms that needed to be used up fast, along with all the other bits and veggies.. shriveling ginger root, etc.. plus I had a couple bags of shrimp in the freezer of different sizes that really needed to get used.. and I had a bag of those shirataki noodles that I really wanted to try! So this was a total winged together soup, and I loved it! I LOVE those noodles too.. going to def get more. After we had eaten all the shrimp out of this, I ended up having an afternoon snack of just shrooms and noodles, cold.. good veggie stuff, and satisfying.

Tom Yum base x1

chicken stock x1.5-2 of soup can

cilantro- lots

shrimp- lots

8-12oz sliced mushrooms or more

onion half or so

garlic a few cloves

ginger- inch or so

lime juice- 1

coconut oil

sesame oil

package shirataki noodles  

saute mushrooms, garlic & onions in T of coconut oil & drizzle sesame oil, add tom yum, add stock, ginger.. simmer, add lime juice, cilantro, shrimp, and noodles and remove heat- serve when shrimp is done with more cilantro.

hey cool. my kind of cook. haven't seen that brand around here but will look. i like to make soup dumping in whatever i have.  love the tai coconut lime soup and make it with low fat cocomut milk and whatever is around. and everything is good with lime.  diane
