Can we talk? I need help screwing my head on straight.

Hi Trish,

I think you have more of a plan than you give yourself credit for. The idea from Sandy to make ahead and freeze is a super good one, especially since you have access to a fridge and microwave. You will have ultimate control over what you have available and since you have such a severe allergy it's pretty much a life saver.

Thanks Jean, Yes, Sandy's idea was the BOMB!  I love it!

"ultimate control" over my food intake is an absolute necessity.  I can't rely on anyone but me to keep me safe, so the cooler idea is awesome!

I second the meatloaf muffins. I have made them with lean turkey and added some grated carrots and zucchini, along with some onion, seasonings, and an egg white. You could add anything to them. I also added a small amount of oats to the mixture, but you could figure out something that would work for you.

Thanks Gail.  I can replace the small amount of oats with a TBSP of brown rice.  This recipe will work for me.

I just wanted to add that I use ground chia seeds for my meatloaf. It's gluten free and all fiber. A little goes a long way!

Thanks!  I like the idea of chia seeds, that sounds really good!  I don't have time to go buy them, so I'll try that next time.  However, instead of using brown rice, I'm going to use some black Quinoa today.  It's also GF, and I have it on hand.  What do you think? 

I also have flax seeds.........they could work pretty well too......

You guys are sooo awesome!!!  I thought laying it all out here on the vet OH board was the right move, and it was!!!


I'm all motivated now.  I got out of my sweaty work-out clothes, took a shower, I'm dressed, half packed, and I'm working on my menu.  Here's what I have so far:

1.  I'm going to cook up a whole bunch of chicken breasts.  I can use them for so many quick meals, such as salads.  My all time favorite is to put tomato sauce on top of chicken breast chunks, add a bit of Italian cheese and nuke.  It's delicious!

2.  Those protein pancakes are going with.  I'll take it a step further and buy some Jimmy Dean turkey sausage, precooked, and buy some heavy whipping cream.  I can add splenda to a bit of it and whip it up in a cup.  That way I'll get my fantasy Mother's day breakfast and stay on plan!!  Whoooo Hooooo.  It will be special, and I won't feel deprived.  Instead, I can enjoy the time with my mom.

3.  Those little meatloaves are going!  I can eat them with a small salad, or frozen veggies.  I can nuke the veggies.

4.  I have Quest bars which are gluten free, and pepper Ostrim sticks which are also GF.  These will work as snacks on the airplane and during the layovers.
