Where can I pick up a copy of your cookbook Elina?????

You have some really good ideas.  I would love to know how to make those PB2 pancakes, but, of course, if they have any sort of wheat, rye, barley or oats in them I won't be able to make them because of allergies to those grains.

Your dip also sounds really good and way less calories and fat dense than my homemade ranch.  I like artichokes...YUM!!!

The protein crepes sound fabulous too!  I could do a lot with something like that.

I ate a bowl of your green chicken soup last night.  I swear, it made me feel full for hours.  I was still full when I went to bed, 4 hours later!!  It's really quite astounding, I am impresses at it's rib sticking properties.  It is also very delicious and a keeper recipe.  Thank you!

I bought cottage cheese yesterday, I wish I had bought ricotta.  Next time I'll buy it.  I want to make some of eggfaces recipes.  It's been a long time since I've made them......and there are some great recipes on her blog.

I won't do apples till I'm done losing, but I could stuff those crepes with warm strawberries sweetened with splenda.  Strawberries are low carb/calorie, and very doable.
Thanks again Elina!

Trish, here is an idea.

Strawberry Protein Pancake (soy, dairy & grain free)Makes 1 large pancake
  • 1.5 tbsp almond flour
  • 1 scoop vanilla protein powder
  • 1 whole egg
  • 3 large strawberries sliced
  • Cinnamon & stevia to taste
  • 2 tbsp PB2 (peanut butter) mixed with water
Mix all the ingredients together except for the PB2, set off to the side for topping. Set your stove to medium to medium-low heat, preheat frying pan. Heat will vary depending on the type of stove you are working with. I have a gas stove, so my stove top gets very hot and cooks my food very quick. Once the pan is hot, toss in a small scoop of extra virgin coconut oil to coat the pan. Pour the batter into the pan, cover with lid and cook pancakes for a couple minutes on both sides until golden brown brown, flipping once. Bon Appétit!

or try this, you might want to substitute PB2 for the peanut butter:

or try something like this for the crapes, I would not use the butter, I would use spray and maybe one egg and two egg whites.

or these:

There are so many options out there. I hope you find the ones that really work for you. Have a fantastic Sunday. Take care.

Oh man.....these are some FANTASTIC ideas!!!!!  And I have the ingredients.  I have ground flax seeds, almond flour, cream cheese..etc.

This reminds me of the low carb days of cooking, except, nowadays, I also need to make them less fat and calories.

Thank you so much.  I'm making the almond one for lunch today.
