Make it stop!
I'm with Mac, don't be afraid of fat! I've added canned coconut milk to my protein shakes. Most brands have about 100 calories and 10 grams of fat in 1/3 of a cup. It's an easy way to get in more calories without the volume.
I also cook my veggies in coconut oil. Try slicing some sweet potato and brushing on some coconut oil and bake about 20 minutes. Yumm! Very healthy carbs with some good fat.
I also add a tsp of good quality butter (from pasture raised cows) to my eggs when I make them in the morning.
If you get creative you can add GOOD calories to your diet without turning to junk! I've switched over to the Paleo diet lifestyle because of the health benefits and immediately lost a few pounds that I didn't want to lose. After adding in these good fats and a few quality complex carbs the pounds came back.

To get my calories up, I probably eat 6 times a day now. I wait a little less time to drink so I can get in my fluids. I've added some things like quinoa & edamame salad or Ryvita crackers along with my protein, if I have room. Trail mix has helped, and I found Cliff Mojo Trailmix Bars which do have some carbs but also 10g of protein. I can drop back down to the 600-800 range if I want too without hunger. It just feels a little weird waiting to eat longer between meals. I'm in the every 2 hours habit, now, because I can't eat very much at one sitting. Like you, about 2oz of anything dense.
I'm maintaining at about 145 at an average of 1500 calories per day. I'm still a work in progress though and am still trying to find the more comfortable calorie range to allow some occasional treats, but to maintain where I am or a little lower. I'm exercising a lot, so I can afford to eat more calories.
