Tonights dinner *YUMMO*

Withhhhhhh..

Tofu-shirataki

and

Chicken beast

and..

Atkins Alfredo Sauce

2 tablespoons unsalted butter
1½ cups heavy cream
½ cup grated Parmesan
¼ cup grated Pecorino Romano
1/8 teaspoon pepper
Pinch ground nutmeg

Directions:

1. Melt butter in a medium saucepan over medium heat. Add cream and simmer until reduced to 1 cup, about 10 minutes.
2. Remove from heat; stir in Parmesan, Pecorino Romaro, pepper and nutmeg until the cheeses have melted and sauce is smooth.
3. Serve right away.

and cilantro if you choose..

OMGosh...this is meal is not only low carb, but it's gluten free!!!  I have a wheat allergy!!!  I hope I can find those noodles.  Where did you buy them, and are they really good??????????  Rice noodles are high in carbs, high on the glycemic index, and a total slider food. These noodles fit the bill as a great replacement!  Thanks for posting.

Hi Trish!!!

I'm in Canada...Found them at Safeway..Prior to that, I ordered offline. But, my friend in Florida buys them from a local Asian store. Hope this helps. I thought of the gluten free thing was a bonus too, not that I have celiacs disease or anything. Just for peeps that have a allergy against it!

YAY!!!  I found that they carry them at Central Market in San Antonio, but I'm going to call a few Asian markets that are even closer.  Yes...the gluten free thing is HUGE, I frequent the Celiac forum even though mine is an allergy, there are more Celiacs out there than allergy peeps, and they have the same diet restriction as me, so they're my people too.  I'll have to share this find with them.  Can't wait to try them!!! Thanks!

When you first get them don't let the smell to turn you off...Rinse them reallllllllllllllyyy well. The smell goes away!!

Donna, how long do you rinse them?  I've never gotten past the smell and have dumped every package I opened.
