What's Your Favorite Portable Lunch Stuff

Ok Everybody; those of you who have to take a lunch to work or other portable meals, what sort of stuff works best that is quick and easy? I work in an art studio and while there is a refridgerator, I am always looking for easy things to toss in my purse and take. Some things I do are:

String cheese and some grapes
Toasted almonds
low carb flat bread with some almond or peanut butter and rolled up
Cubes of other cheeses
GY in a single serving though the fat free is often hard to find in our area.
Smoked tofu sticks from the hippie coop
Fresh snow peas I am growing in a pot on the deck
Tuna in a pouch though I am sick of this
Power Crunch protein bar

I know I should make protein muffins and eggface bites but I guess I am too lazy.

Who else has some easy high protein stuff to take for lunch?

Popeye pies.  I have em for breakfast every morning, but I make them in batches and freeze individually in ziptop baggies, so if I am going to be gone for the day, I toss a few frozen ones in a keep cool baggie and they thaw but do not go salmonellic (is that a word?) 

Course with the zillion degrees its been here, if I just leave them on the car seat, the are like I just got them out of the convection oven.  :}

Lately I've been having cracked-pepper dry salami wrapped around an avocado, english cucumbers, sugar snap peas and some grape tomatoes.

So, dry salami is good and an ounce of ground beef is not so much?  Funny gurl. 

Here is my recipe, because its not like that other one much.

1 ounce ground beef (*or whatever meat or you could leave it out, I like the chew of the ground beef)
1 egg
1 ounce fresh spinach (I use the pizza cutter to cut it into shreds, soggledy frozen spinach bums me out)
1 ounce of cheese (lately since I was leaning out from vacation pounds, I have been using 0.25 ounces of a goat feta instead of my usual ounce of sharp stanky cheeddah!!)
1/2 T ground flax
SQueeze of lime on top
Shake of Chicago Steak Seasoning

And then I just use my pastry brush to swipe the bottom of the little container with coconut oil (or you could use whatever oil or spray you like).

Onion is good but I just do not use it and I wonder about zuccini going soggy. 

I am definitely a texture freak sort of human.  If/When I do not care about carbs then corn niblets go in there too.  That's how mama made it, corn nibbles, green beans, spinach, cheese, ground beef, egg with a squeeze of lime on top. Yumz!

That's me...funny gurl :)

I'm gonna try your recipe....sounds absolutely yummy!  Plus, I'm a texture girl and we texture gurls have to stick together :)

Yes we do!

You know, you could always put Boca crumbles or Morningstar crumbles in there if you were wanting it to be vegetarian. 

Also, ham/broccoli/swiss, or even smokedturkey/broccoli/swiss is another nice combination of flavors in an eggiedoo muffiny thing!

Hey girl.....don't misunderstand....I'm not a vegetarian.....that's the recipe that came up when I googled.....I'm a dry salami girl.....LOL!

I was thinking about something like this....based on what we call a "Joe's Special" here in San Fran.... Was thinking of doing it in a muffin pan or ramekins....

What does ground flax taste like?
