Chili Lime Almonds

Just tried out a new thing to take to a party today. Not bad - recipe may need some tweeking but here it is:

One egg white
juice of one small lime
about 2 tbs chili powder. (could add some hot pepper or cumin or smokey paprika or garlic powder)
1tsp salt
3-4 cups raw almonds

whisk all but almonds together in one of those big pyrex measuring cups. stir in the almonds until well coated with the stuff. spread on a baking sheet sprayed with Pam. Bake at 300 for 10 minutes. Stir and then bake another 10 minutes. Remove and stir and let cool on the baking sheet. They will crisp up as they cool.

I see lots of variations for spicy almond with this method for most any herb combination.

Sounds yummy Diane.  I've been just toasting slivered almonds in a frypan with no oil and then using them to top my salads for an extra crunch.  I love the added flavor and for me, it keeps me from eating too many if I just measure out a tablespoon.

forgot to mention i put a dash of cinnamon in these almonds. and i think they probably could use more salf and maybe a pinch of cumin or cayenne pepper to intensify the flavor. diane
