Obsessed with Lime
My new food obsession is lime. Bought a big bag at costco on impulse and now i put it in everything. Just had shrimp cooked in a bit of olive oil and lime juice. Last night made asian tofu stir fry with ginger, soy, garlic, lime juice and hot sauce. Made asparagus lime chicken soup. Cook chicken and fish with lime juice. Love iced tea and now add lime. I am wondering how to make some protein ice cream with vanilla powder a lime juice. It just makes everything so good! and no I am not pregnant. Diane
I MUCH prefer lime to lemon. I also have those little freeze dried TrueLime packets and will put a packet or two in vanilla protein shakes for a key limey treat!!
I will also, if I have lime that needs using before I am getting to it, will squeee it into ice cube trays and then after they are frozen, dump the cubes into a ziptop baggie. Good for cooking, crunching up in protein drinks, or other drinks as you like!
Another thing I made with lime/drink over lime cubes are Fauxjitos.
I take a 2 L bottle of lime flavor fizzy water (sweetened) and then I squeeze 3 limes into the bottle and a monster bunch of mint that i have smooshed all about to make it aromatic and release the oils and cram that into the bottle. I will also put rum flavoring in there. 1-1/2 T per 2 L bottle is good. Its a nice refreshing drink. You can add wine or real rum if you like, but its lovely without.
When I know I am making it ahead of time, I will make lime N mint cubes, smooshing the mint leaves around to release oils and then putting in the cube tray and freezing along with the mint. I also, with leftover mint, (cilantro too) freeze it individually on a tray, and then put it all into a ziptop and freeze, then I can pull out sprigs without having to pull out the clump N setch.

I had to buy a bag of limes today after hearing all the great ways to use them. I'll cook some fish tonight with lime.
I sent for some free samples of the TrueLemon and lime packets that Brandilynn mentioned and got them yesterday. The first one I tried gave me heartburn. How disappointing. I'll try another one today and see how it works out. I'm trying to get off my PPI and not add to the acid. Bummer.
