The Cinnamon Almonds

Brought these to los gatos and had copies of the recipe but lost them in my car somewhere. I will put this on my blog page too. They have almost no calories beyond the almonds and its what kept me out of christmas treats:

Cinnamon Almonds

3-4 cups raw almonds
one egg white
2 or more heaping tsp cinnamon
2 heaping tablespoons brown sugar Splenda
1/2 tsp vanilla
1/2 to 1 tsp salt

Whisk all ingredients except almonds together. I use a big pyrex 8 cup thing. stir in almonds until well coated. Spray a cookie sheet with Pam. Spread the sticky almonds on the cookie sheet. Bake at 300 degrees for 10 minutes. Stir the almonds around with a spatula and bake for another 10 minutes. Do not overbake. Remove from oven and stir almonds again. They will seem still sticky but will crisp up as they cool. They can cool on the cookie sheet. Store in an air tight jar when cool.

This could probably be adjusted for savory or hot spices or used with cardamom or other interesting spices. the egg white binds the spices to the almonds and adds no calories. The brown sugar splenda does have part real sugar so someone might try making this with a lesser amount of regular splenda or another sweetener that takes heat. cinammon coco might be good too.

Diane, these are to die for.  Thank you for the recipe.  I will make some tonight when I get home.  My husband really loved them too.  They are really good enough to bring to regular parties as treats not just the VSG parties.  Yum yum.

I just went out and bought all the ingredients, accept I bought salted roasted almonds.  I think it'll still work.  I'll let you know.  I also bought Targets Cinnamon Honey Almonds just in case!  The bad part is, I ate 2 whole ounces already!!!!  Guess that's my dinner!

Too bad I can't take a cool picture of the almonds like your food pix Frisco. I think if I did, they would look like rabbit turds which would be a shame as they really are pretty good.    Diane

Hey Diane, I've roasted a lot of almonds with different spice combos, but I have never heard to use egg white.  What a great idea.  It would really help the spices  stick.  This is a keeper recipe.  Thank you.

yep, it was adapted from a recipe off the internet which used regular brown sugar and a boat load of it. I was looking for something to take to a christmas cookie exchange that i could eat and that would work for the diabetics. The first version was so so but the revised one worked out. I am going to try this with walnuts too.   Diane

Diane, this looks great but at my recent three month check up my NUT told me that nuts are not recommended because they are too high in fat.  She said no nuts, no peanut butter.  She told me to eat soy nuts and PB2.  I'm bummed because I love almonds.  How are you all eating these and still maintaining a daily calorie ceiling?
