It all started with this WONDERFUL ladies website http://theworldaccordingtoeggface.blogspot.com/2007/08/puree d-foods.html scroll down to find her Cheesy Cauliflower Casserole...

I then changed it because I don't keep milk in the house due to my post WLS lactose intollerance (mainly to milk & ice cream)

Ok I steamed a head of cauliflower set aside; boiled a pound of chicken (reserve the water), shreded it and tossed it in with the cauliflower; added a can of cream of chicken soup; tossed in an 8oz bag of cheddar cheese (left about 2-3oz to sprinkle on top); started stiring and would pour in water to get it to a really THICK yet soupy consistency (maybe about 1 1/2 cups of chicken water). seasoned it with garlic powder, salt and pepper.  Poured into a pyrex dish and baked it at 350 for 30 minutes.

I SWEAR it tasted like a chicken noodle casserole...gave me the idea to FINALLY make me a Tuna Casserole which I have missed since surgery but not anymore.

I had to make this casserole since I have been seeing it on your daily thread that you ate it. I got to make it like, she says....OMG the sauce is heaven...I am ok with milk and cheese, its ice cream that bothers me...Sours in my stomach.


I will post pictures after dinner...hehehehe!! Looks heavenly in the oven!

Hey Donna the next time I make it I'll use closer to her recipe.  I am more of the thought cows milks is meant for feeding baby cows SO when I became lactose AFTER surgery it's just become easier to not drink it so I don't have it on hand.

1/2 cup balls Cantaloupe
1/2 cup Chex Cereal
1 serving spanish peanuts
mango greek yogurt
1/2 cup cottage cheese
1 serving Fat Free Skim Milk
1/2 serving Honey
1 serving Honeydew Melon

I had the to make myself eat all of this. I have been having trouble eating, I just don't want to eat. My trainer has fussed me out because I am losing muscle since I am still losing weight. I don't really want to lose anymore weight. I am in a size 6 now, so my NUT and my trainer have charged me to eat more. I normally get around 1200 calories, but I workout so hard that I burn too much. I feel like a pig because I have been eating every 2 to 3 hours.

These head trips are the worst!

I am glad to see that I am not the only one who enjoys chobani yogurt.  The black cherry and mango are my favorite.

I live on the stuff. One of my favorite proteins. BJ's has a 12 Pack Variety pack of Mango, Black Cherry and Pineapple for $10.49
