Whoever invented carbs should be shot

I own what I said and am up front about it and I do not apolgize for it.
I do not agree that you were wondering out loud, or if you were the only wondering you were doing involved negative reasons why someone would not want to post, rather than considering how your posts might impact someone.
I did not take anything you said personally, in fact what you think of me is really not any of my business or something I am terribly concerned with.
What I am concerned with is trying to show folks that there is a way to be successful after VSG surgery without doing Atkins type dieting, it may not be what everyone chooses but they should be aware there is a choice and have that information available rather than being told there are secretly feeling guilty for believing it.
That said, some people have more trouble with carb cravings than others. I totally understand that and believe some people just need to abstain rather than eat in moderation. There are "carbs" that I can't eat, but really it's not a "carb," it's a sweet - like cupcakes, donuts, cookies, etc. Sugar will always be the bane of my existence. And I don't even think sugar is bad - I just have trouble controlling myself with certain sugary food items.
But the whole "carbs are evil" thing drives me bananas, I must admit. Mostly because people think carbs turn straight to fat, which is false.
I was a type-II diabetic before my surgery, and I know all too well that high carb intake, for me personally, means that my little "mailmen" otherwise known as insulin do not properly distribute the "mail" otherwise known as glucose--what virtually any and every carbohydrate is or turns into in the body--to my organs. As such, that crazy mail, glucose, just runs around freely in my bloodstream wreaking havoc. And, ultimately, all that mail gets dumped in my liver, resulting in fat distribution rather than the bonfire (otherwise known as burning energy) that is supposed to occur.
Being insulin resistent as many people are means that our bodies simply don't use glucose, carbs, as it should. This is medical fact.
Do I eat carbs? You betcha. Do I monitor my intake on regular days? You betcha. If I eat more than 40 or so carbs a day, I WILL NOT LOSE WEIGHT. And, if I indulge in true "junk" carbs, I WILL GAIN WEIGHT.
Glucose stored in our bodies creates inflammation. So, sure, I lose that "water weight" pretty quickly (as many of us did during that torture otherwise known as the "preop" diet), but it's still weight, and it prohibits me from acheiving my goals if I don't stay diligent.
The other side of this is what Brandilyn talks about a lot....cravings.....it's fact that glucose causes a rise in seratonin--the feel good hormone. But, it's short lived. Then, we are low again, and we signal a need for a "pick me up." The cycle begins...for some of us. it's science, not will power. Even though glucose is running freely through our body, insulin can't properly distribute it, which means our cells are still craving energy.....a signal to the brain to eat more.
We are all, indeed, very different. You can be positive sure that I don't say no to anything (except soda because Jimbo is right...IT is the devil!). But, I simply cannot live my "everyday" life with white carbs or processed foods if I want to maintain a healthy weight. Hate it, but it is what it is. I just suck it up and know the consequences for my all too often vacations. I know what I can expect on that damn scale when I return from eating "at will."
A textbook example of my world is this past weekend inclusive of a birthday party I hosted. I put protein first, veggies second, and carbs last as I usually do. But, I had a cupcake. Then, I had pizza the next day. Then I had a couple of snack size candy bars the next. then pasta salad, potato salad....it was like I was at a mental orgy, thinking of the next "bad" thing I could eat. I saw it happening, but I really, really wanted that crap. A four-year old birthday party lends itself to indulgence for a variety of reasons.
My Monday started with a six pound weight gain. Yep...six pounds. They are gone now....peed like a racehorse all day yesterday. But, still. For my mental health, and my body too, I need to watch those pesky carbs.

Yes.. one theory in paleolithic nutrition is that most carby foods (veggies and fruits) would have only been available in the spring/summer and thus allowing us to fatten up for winter. Additionally geographic paleolithic nutrition would say that some people from certain ethnic backgrounds would be able to tolerate more carbs than other ethnic backgrounds based on what would have been available in the environment.
So for example people with paler skin would likely have evolved in colder climates with less carb sources available, and be more adapted for a lower carb diet, versus people with darker skin who may have evolved in a warmer climate with more carbs available.
Plus the carbs available in modern times are genetically engineered to be much higher in sugars and much lower in nutrients (depleted soils and displaced by sugars) and are very different than what our paleo ancestors ate (and they did not eat grains or dairy either).
Another theory is that diabetes actually evolved as an adaption for people who hailed from an environment with very little access to carbs. It was a way to make the most of every carb that you were able to get a hold of, but is a genetic bomb in our modern carb-laden society.

There are definitely people on these boards that feel the need to constantly rant the science and rant their truth! I have no problem with people telling about what is the truth for them .. in fact for those of you who are interested - when I eat ice cream (which occasionally I do tut tut) I **** through the eye of a needle!
I have to admit that even mentioning that I occasionally eat the wrong thing makes me very nervous on this board because the carb nazis (no one in particular for Gods sake!!) do seem to take it as a personal affront and get on their soap boxes - kind of like the carb evangelists!!
Yes, I have a problem with carbs - but I also have a problem with overeating every food group!! I am an emotional eater big time - I am not sure if I am an addict - still trying to work that one out. I have compulsions to eat for absolutely no reason - but honestly I could spread butter on cardboard and eat it if it was the only thing in the house!!
