I LOVE these!
I subbed soy flour for the regular flour and almond milk for regular milk, so these are very low carb - and totally delicious!
I stuffed them with salmon and spinach mixed with laughing cow cheese last week, and then made manicotti with a ricotta, egg, parmesan and spinach filling this weekend.
Next up: Chicken and green chile enchiladas and cheese blintzes - almost like Nana used to make! I may even get ambitious and use these for a lasagna.
Our new favourite veg is broccolini - sauteed in olive oil with a bit of sea salt on top. (When I say "our" that would NOT include my 10 year old...!)
Last week I had Chinese Broccoli at Ming's Restaurant in Palo Alto........
Soooo gooood!!!!!
More stalky less flower than American broccoli..... (stays in your sleeve longer)
I think I'll look for it at a Ranch 99 Market.
