I have realized that I have been so focused on eating more protein, less carbs and keeping my calories in the right place, that I have completely neglected a lesson I learned before VSG.  I need to eat more veggies.  I love them, they are very filling to my little sleeve, are great for me, and have very few carbs.  I can eat almost as much of them as I want.  I am off to the market to but bell peppers in all colors, carrots, celery, radishes, snap peas, broccoli and cauliflower, green onions and cucumbers.  If I see anything else I like, I will buy it too.  I am going to make a point of eating at least one snack made of these and Fage yogurt with lemon juice, sea salt, and fresh dill.  I am also going to find a good recipe for lower fat hummus and eat that too.  I also have found the seaweed everybody has been talking about from TG's.  Oh my, this is my new addiction.  I have to fight the kids for it.  It is amazing.  I know people either love it or hate it, I love it.  Only 60 cals. for the whole box and very little sodium and only one carb.  These are my new potato chips.  Has anyone else found any new product or old product they must have?  I  would love to know.  I also made some crab bites in mini cupcake tins with goat cheese, crab from TJ's, dill, egg, tomatoes, onions, artichoke hearts, and a few diced up calamata olives.  I don't have a recipe, just throw together and bake for about 30 min.  Oh yea, I sate the onions first. Yum.

(I'd try greek yogurt in place of the plain yogurt the recipe calls for.. less carbs, more protein)

I love the idea of the low-fat hummus recipe.  I am going to make it tonight with the peanut flour from TJ's.  and report back.  I loved the cucumber salad too.  Thank you.  The kids and I had a great time yesterday.

Hummus and HB eggs are a "staple"  of my diet.  I also eat the frozen asparagus from TJ's  easy to quick saute'  or nuke it!   Oh!  I also eat their roasted red & yellow peppers  (in a jar)  with my cheese or meat.....yum!

I just made the low carb crepe recipe from Eating Well... Living Thin


I LOVE these!

I subbed soy flour for the regular flour and almond milk for regular milk, so these are very low carb - and totally delicious!

I stuffed them with salmon and spinach mixed with laughing cow cheese last week, and then made manicotti with a ricotta, egg, parmesan and spinach filling this weekend.

Next up: Chicken and green chile enchiladas and cheese blintzes - almost like Nana used to make! I may even get ambitious and use these for a lasagna.

Our new favourite veg is broccolini - sauteed in olive oil with a bit of sea salt on top. (When I say "our" that would NOT include my 10 year old...!)

LOVE that seaweed! It is a perfect snack. I made a big batch of gazpacho this weekend, so refreshing and yummy tasting...

Last week I had Chinese Broccoli at Ming's Restaurant in Palo Alto........

Soooo gooood!!!!!

More stalky less flower than American broccoli..... (stays in your sleeve longer)

I think I'll look for it at a Ranch 99 Market.
