My favorite snack - Nuts

I would like that recipe Diane.  I know you posted it before, but I must not have saved it in my recipe folder. 

Once in a while I buy the honey roasted almonds.  A few carbs, but they are a nice sweet change of pace.  Your recipe might be the answer to replacing the honey roasted ones.

Here is the cinnamon almond recipe. kept me out of the christmas cookies and such.


Cinnamon Almonds

3 or 4  cups raw almonds
1 egg white
1 -2  tsp cinnamon (or more)
1 tsp vanilla
2 heaping TBS brown sugar splenda
1/2 tsp salt.

Beat the egg white with a whisk and then whisk in the vanilla, cinnamon, salt and brown sugar splenda. stir in the almonds until well coated. they will seem sticky. spread on a cookie sheet in a single layer that has been well sprayed with pam. Bake 10 minutes at 300 degrees, then stir well and bake another 10 minutes.  remove and cool on sheet. they will seem still sticky when removed but will crisp up as they cool. Tastes great and while brown sugar splenda has some real sugar in it,  could probably do it with a reduced amount of white splenda if you want to avoid every bit of sugar..

I waited until I was close to goal to start eating nuts regularly because they are high in fat. But now I eat them all the time!

For me, they are the best treat.  I've always been a salty, crunchy type person (instead of sweets), so this satisfies that craving.

I personally avoid nuts because my calorie counts are too high, but I think they are great for you. If you can control your portions pretty well and you make good nut choices, they are a really good choice. Peanuts and cashews tend to be poor choices, and those are the ones I eat (well really overeat) and have problems with, so I have to avoid those.

I do have almonds in the house and will have them on occasion, and I find almonds are OK for me in terms of not wanting to binge. Lately I've been doing lotsa jerky for my snacks, but maybe I'll have a few almonds tonight.

I like jerky too for a change of pace.  With the nuts, I HAVE to measure and pack in the snack sized zip locks or I would lose control.

I like the lemon sprouted almonds.  They taste great and have an added crunch.  I buy them at the farmers market.  Yum.  But I do have to measure out how much I eat or else I can over eat them very easily.

I also eat almonds, almost every day. I have tried the raw ones and keep coming back to roasted & salted. yum!

once upon a time I had a group to talk about Binge Eating Disorder, and later one about Clean Eating.
