Almond Milk
So I made Almond milk following my post on Caffeine/Lattes the other day and it was super easy and pretty yummy. I was a bit concerned about the amount of carbs in the milk I buy and according to Brandilynn and Sublimate almond milk is a good option (1 carb and 40 cals per cup).
It tasted quite good - way better than soy that I have tried in the past - and was different but not bad in my coffee - most new things are an acquired taste though eh.
We don't get the amazing array of low carb high protein stuff that you guys seem to get in Nth America (no high protein greek yogurt or low carb milk etc) and the almond milk was a way of reducing carbs a bit - didn't think it would hurt to try!

I have heard there were recipes... I just found this at cooks.com. Not sure how you would make a fat free one..... You could search the internet and maybe find a recipe. I think I heard another way to make it was by straining fatfree yoghurt overnight in cheese cloth. Greek Yoghurt is thicker than regular. Love mine with honey, or I use it to substitue for SourCream

1 quart whole milk
3 tablespoons plain yogurt with live culturesBring milk to a boil, then simmer for two minutes. Place pan in sink filled with cold water until you can hold your clean finger in it for a count to ten. Or, use a thermometer and bring milk down to 109 degrees. In a bowl, mix the three tablespoons of plain yogurt with the now warm milk. Cover with plastic wrap. Wrap bowl with a big blanket and put in a draft free area (the oven is a good place) for 6 to 8 hours. This yogurt keeps in the refrigerator for about two weeks.
To make "Greek yogurt", pour the finished yogurt into a colander lined with sterilized cheese cloth, and let drip for an hour or two. Then, refrigerate. Lasts for about two weeks.

Definitely give it a go - it was really easy and I got a surprising amount of satisfaction out of making it - a kind of Mrs Walton feeling!

This morning I put it in the blender with some ice and vanilla protein powder and it was absolutely delicious! You know that fab feeling you get when you find something super yummy and good for you too, I have pretty much drunk protein shakes under sufferance because they're always gross! That will be my almond milk drink of choice I think - yummo!
