On Sunday I took the time to make breakfast, lunch & dinners for the week. I need to do this more often as I will spend less time staring at the fridge wondering what to eat (from the few things in there). I made Shelly's eggbites and a huge pot of delicious Thai stewed chicken (recipe below). I am the kind of person that doesn't mind eating the same thing 4 or 5 days in a row. Once the food cooled, everything got weighed and put in baggies. Grab n' Go!


Mimi's Thai Chicken Stew
1 envelope Coconut Ginger Soup Base paste (there are 2 envelopes per packet)
2 tbsp mild curry paste
2 tbsp goya sofrito (green)
1 tbsp olive oil
1/2 bunch chopped cilantro
1 bunch chopped scallions
2 cups halved baby carrots
4 skinless drumsticks
4 skinless thighs
about 2 cups water
simmer 2 hours

Frustrated with scale.  The more I increase my exercise, the more it climbs.  And, it's the week before my monthly....not helping.  But, this too shall pass.
