tuna recipe
So I have about a million cans of tuna from a Costco purchase that i needed to use. I wasn't eating them as a whole can of tuna is too much for one little sleeve and leftover tuna seems to just sit in the fridge and stink.
So I made these tuna croquettes. Take two cans decent quality tuna and drain well. Take a half slice of low carb flat bread and grind it up in the food processsor into little crumbs. maybe add a teaspoon of wheat bran if you have it. mix this with the tuna and two eggs and salf and pepper and a little dill weed it you like. Heat a non stick pan with a little olive oil to med heat. spoon the tuna mixture into about 6 blobs in the pan, each one forming a patty. cook 3 or 4 minutes on each side until golden. serve hot with a blob of fat free mayo or lemon. each patty has about 12 g protein, less than 1 carb, and about 75 calories. two make a good dinner. probably could be frozen and reheated later.
