A holiday receipe
Ok so today I am going to a club xmas party that includes a gift exchange and a cookie exchange. Now I used to be the queen of Christmas cookies (about the only thing I liked about Christmas) and had a collection of excellent receipes. But I am obviously not going to do that this year or in the future but wanted to take something to share. So I found a receipe on line for cinnamon toasted almonds which I modified to get rid of the sugar. Take about 3 cups raw almonds, coat in a tsp of cooking oil (might be able to use pam spray) and then stir in 2 or 3 tablespoons brown sugar splenda and about 2 tsp cinnamon. stir well. spray pam on a cookie sheet and roast the almonds in a single layer at 300 degrees for perhaps 15 or 20 minutes, stirring once or twice. smells and tastes great. the origional receipe called for a coating of egg white with sugar and vanilla and cinnamon and that could be done too while substituting the sugar with splenda. I kind of over toasted my batch so the cook time above is less than I did.
If you are what you eat I swear I am going to turn into an almond. I freshly toast some in the microwave almost daily. Talked to my dietician yesterday as I am continuing to lose a little and really should stop so almonds are something I get to eat a lot.

Indeed girlfriend, never met a nut I didn't like. Nuts about nuts. And the whole thing is good with pecans too if you can find reasonably fresh ones. Love em. They say almonds are the healthiest. but even during my weight loss phase i would occasionally have a few mac nuts and it was such a treat. I think such little indugences help you stay on course. D
You know walnuts have good omegas too! And macs are the least carby of the bunch!
Hey! You have that peanutbutter/splenda cookie recipe yes? That would be superfine with macnut butter, or almond butter too!

I guess I do not think about nuts as indulgences, just regular ol foodies!
We are going to hawaii in January, I am going to have me TOO MANY fresh macadamias if I can help it! *slurp*

Just in case you didn't know, Brown Sugar Splenda is half Splenda, half REAL brown sugar! It's very high in sugar and definitely isn't low carb. I remember when it first came out and I found out it was that high in sugar I was so MAD!

yep, i am aware of the contents of the brown splenda. the original recipe called for a half cup of regular brown sugar so i thought it was pretty good to reduce it to two tbs brown splenda. far less sugar and carbs. could be made with regular spenda since the cinnamon is the main taste. also i may try a version with a little honey. even though its full sugar and carbs, i find honey (especially some of the specialized intensely flavored kinds) give a lot of flavor in small amounts. I often use a tsp of blackberry honey in GY as it doesn't add that many calories and sure tastes good. I am lucky to be at goal and actually got told by dietician to increase calories. never thought i'd hear that in my entire life. but being judicious about it.
Do yeah, brown splenda isn't ideal but used on a limited basis can be useful. Diane
