The easiest and healthiest way to add calories is to add fat to your diet.  There are several reasons that this is best:

1) Your body synthesizes hormones from fats
2) There are some really great fats that help fight infection (coconut oil, olive oil, avocados)
3) Just a little bit adds a LOT of calories
4) Fat doesn't increase your insulin and therefore is less likely to prompt cravings
