how are you handling the stuff-a-thon?

Thanksgiving is fast approaching. Last year I was 10 days out of surgery and just ignorred the whole holiday and didn't go to the family dinner and just napped and goofed off. Since I didn't cook the big bird or do anything last year I feel its my responsibility to do the dinner this year. So i am gonna make the turkey, stuffing and gravey and some green vegetables. I am going to ask sister in law ( she and i are the alternate cooks) to do whatever she wants for desert and to do whatever she wants for potatoes - mashed, sweet potatoes or whatever. that way i don't have to do that stuff. to tell the truth, i would be happy to ditch the whole holiday except our wonderful nephew comes and its our only visit with him and i want to make the thing nice for him. some of our family is morbidly obese and some not so i gotta have options. Will get a fresh turkey since i am so sick of wrestling with the semi frozen carcus to get it stuffed. I swear global warming could be remedied by tossing a hundred frozen turkeys in the ocean because they NEVER  thaw.

anyway, thats my plan. what are you guys doing?  can anyone think of a way to make low carb stuffing? maybe using some low carb tortillas for part of it? More celery and mushrooms?  D

Thanks girlie. Mama says I am full of it, that's why my eyes are brown.  I say, she oughta know, her's are darker.

I'm going to be in San Diego with family and they are doing all the cooking. I also had my first Thanksgiving post-op there and I have to say that was frustrating. I could hardly eat *anything* because I was so early out.

But this year should be fun. I'll have a bit of everything except stuffing (I'm not a fan) and a small piece of pumpkin pie. My SIL tends to make a very traditional Thanksgiving dinner so it will be turkey, mashed potatoes, stuffing, green beans, rolls, gravy and maybe a salad.

The dangerous part will be the before dinner snacks. I'm sure it will cheese, pepperoni, crackers, nuts, etc. I will probably nurse my morning protein shake and maybe have a protein bar when that runs out.

only two of us, no turkey this year, having prime rib and ham..... potatoes and candied yams im still deciding what desert but im thinking of getting mini graham cracker pie crusts and make mini 1 serving  size deserts so i can not go over board.

if i stick to protein first there wont be alot of room for too much damage (i hope)

Looks like it's me and my mom this year as my brother and his family are going to her parents out of state and me and my mom are dog sitting........Actually looking forward to spending mellow quality time with mom!

I'm thinking Fillet Mignon and San Francisco Dungeness Crab Cesar Salad. And maybe Artichokes if they look good!
