My surgery friend gave me this recipe...

I have to share this recipe with all of you, I made it twice this weekend, and took a huge bowl to our Father's Day BBQ - it fooled everyone and they loved it!

My MIL is 1/2 Indonesian and cooks wonderful rice dishes every time we go over, it's one of the things I miss the most. I can't eat more than a spoonful with out getting sick. So this recipe intrigued me to say the least. Even my picky hubby liked it. I added an Indonesian Fried Rice spice packet to the batch I took to the family, it was way too hot for me, but they loved it.
  You can change it up and add any veggies you like. It honestly really looks and tastes like fried rice.

Mock Fried Rice

1 head cauliflower
4-6 green onions
1-2 cloves garlic
1 tsp ginger (if desired)
1 Tbs. light soy sauce, or to taste
2 eggs, beaten (I used egg beaters to equal 2 eggs)
1 carrot diced, very tiny
1/4 cup frozen green peas (if desired) 
chopped mushrooms (if desired)
Leftover chicken, pork, ham, turkey or shrimp

Directions - 
Using a food processor, process fresh cauliflower until the size of rice, I used the shredder blade to do this. You can also use a hand grater.

Place a tiny bit (I didn't even use 1/2 teaspoon) of olive oil in wok, heat . Add in minced garlic, diced carrots and the white part of the chopped green onions, cook for approximately 1 minute.

Add grated cauliflower and cook for 4-5 minutes, stirring constantly.

Add soy sauce, diced green onion tops, peas and pre-cooked diced meat. Stir well to mix and brown a bit.

Push mixture to one side of wok. Pour in beaten eggs and scramble until done. Stir eggs into "rice" mixture, remove from heat and serve.

This is great for either a main dish or a side. It stores and re-heats very well.
