Mock Rice Pudding HIgh Protein Recipe

 Try making this recipe for you and your guests, don't tell them the ingredients until after they've tasted and complimented you on it!

1 Small packatge of sugar free vanilla instant pudding
16 oz light cottage cheese
2 snack size boxes of raisins
cinnamon (to taste)
dash of nutmeg


Make pudding according to the directions on the box, adding spices before you whisk pudding.  Once the pudding begins to get thick, stir in cottage cheese and raisins.  Place in frig and let set for about 1 hour to blend.

This is so good and it is better the day after it is made.  The raisins get real plump.  I hope that if you like rice pudding you will give this a try.  I could not believe how muchc it tastes like the real deal, but sooooo much better for us!

It's sort of a cross between rice pudding and cheesecake filling.<-------THIS WAS THE PART THAT CAUGHT MY EYE!

I am going to make this tomorrow!  Something else that is yummo is SF instant pudding mixed with ricotta cheese.
