Ok Give it to me ... And Let Me Have It ...

Your favorite NOW food . Do you have a food that you cook , that you have altered to fit your lifestyle now . For instance ... I eat Sweet Potatoe Fries.. They are lower Carb .

I make a crustless Pizza ... instead of the bread type ..
I do a Mushroom Lasagna instead of the real kind ..

What foods do you eat now that you have altered to fit your lifestyle ..

Ok YUM!!!  All 3 of those sound good.  Any chance you would be willing to share the recipes???

I am still in the stages of trying to find my NOW food.  For a while it was chicken any way didnt matter.  Now I am back to the wanting the bad **** and trying to find my groove!

Crustless Pizza

Get a Non Stick Skillet .
Take some shredded 2 percent cheddar cheese , throw in a heated pan . Let it cook till it is crispy. Once it is crispy , let it sit , add some spagetti sauce .. more cheese and some pepperoni... let it heat in the pan .. Pour it on to the plate .. and wala .. crustless pizza ..

Mushroom Lasanga ..
Get 2 Very large Portabella Mushrooms. Do not wash them , but dust them off . You can remove the gills if you want ... but not necessary .
You will make a filling of Low Fat Ricotta , Parm cheese- Spagetti Sauce. You can add Turkey meat or ground beef to the sauce if you like  .
Place one of the mushrooms in a caserole dish. On top of the scooped out side , put a layer of cheese -spag sauce in it . On top of that lay another Mushroom, on top of that add a layer of the Sauce . On top of that cap it off with the 3rd Mushroom.

Place in the oven and cook for about 20 min in a 375 oven .

This is very low cal .. and to me is tasty .. the mushrooms take the place of the pasta .

PIZZA!  Love a big portabella mushroom with sauce and cheese, that is pizza now! LOVE IT

My biggest alteration to my recipes has been getting rid of pasta or rice 'side' dishes.  I went a year without them after surgery.  Cooking for company and for my husband, I added them back...even though I only ate a little, they were not needed.  And now hubby is on Weigh****chers.  So, once in a while, I might make a little brown rice or whole wheat pasta, not enough for 2nd helpings for either of us, but, usually, I just skip it in favor of more veggies. 

I used to try the healthier stir-fry with water instead of oil, but was never completely happy with that.  I tend to make one dish meals in the oven now and use water, a little bit of canola or olive oil, and the juices of the veggies and meat/fish to cook in.  Instead of straight tomato sauce (from a jar), I add tomatoes, olives, peppers, broccoli, whatever I have to thicken it.  The broccoli was a surprising success - I shred the tips into the sauce to thicken and flavor it and it's a real hit...almost like having couscous or rice, but without the carbs.  And I recently served up mashed cauliflower, which looked like potatoes, and took my husband off guard - he loved it.  Gave him his first raw spinach in a salad last night, with tomatoes and sunflower seeds.  Delicious :-)
