I liked this. My husband & daughter thought it tasted like eggs with syrup. I appreciated the french toast flavor and will make it again and again.

I modified an easy brownie recipe to create this cake. It came out well except for the frosting. It was a litle stiff. I'd try it with regular cream cheese spread or add a little smart balance light to it for texture.
The recipe that follows is as I made it, flawed frosting and all. I used special dark cocoa but natural cocoa will do just as well.
If you try it let me know how it turned out. If you can improve on it, please post your version.
LOW CARB SUGAR FREE CHOCOLATE BROWNIE CAKE
Calories 132/ Protein 8g/ Carbs 8g, Net Carbs 6g/ Fats 8g
INGREDIENTS
3/4 cup smart balance light
3 large eggs
1 1/2 cups splenda
1/2 cup GNC unflavored protein powder (54g; 2 scoops=56g)
1/2 cup Hershey's unsweetened cocoa powder
1/4 cup Bob's Red Mill low carb bake mix
1/4 cup flax meal
1 tsp baking powder
2 tsps vanilla extract
DIRECTIONS:
PRE HEAT OVEN TO 350 DEGREES
MELT SMART BALANCE LIGHT
BEAT EGGS AND SPLENDA TOGETHER
MIX TOGETHERR REMAINING DRY INGREDIENTS
ADD VANILLA TO EGG MIXTURE
ADD DRY INGREDIENTS A LITTLE AT A TIME BEATING AFTER EACH ADDITION
ADD COOLED MELTED SMART BALANCE LIGHT A LITTLE AT A TIME BEATING AFTER EACH ADDITION
SPRAY 11"x7" PAN WITH NO STICK SPRAY
POUR BATTER INTO PAN
BAKE APPROX 20 MIN UNTIL TOOTH PICK COMES OUT CLEAN AND CAKE BEGINS TO PULL AWAY FROM THE SIDES OF THE PAN.
FROSTING
2 oz fat free cream cheese
1 tbsp Hershey's unsweetened cocoa powder
1 tbsp splenda
1/4 tsps vanilla extract
LET CREAM CHEESE SOFTEN AT ROOM TEMPERATURE
MIX ALL INGREDIENTS
SPREAD ON COOLED CAKE
CUT INTO 12 SQUARES

This started as a simplified old fashioned baked egg custard recipie like my mom would make. I modified it to make it sugar free and low carb. Its similar to a coconut custard pie minus the crust.
I'm no good with dairy so I substituted almond milk. I've seen custard recipes using heavy cream or 2% milk. I'm sure you expert cooks will come up with other variations to suit your tastes.

SIMPLE COCONUT EGG CUSTARD
Ingredients
Original recipe was made with sugar, whole milk, and did not contain coconut
1 1/2 cups unsweetened almond milk
2/3 cup Bob's Red Mill shredded coconut
48 drops of EZ-Sweetz liquid sucralose (equal to 1 cup granular Splenda)
5 large eggs
1 tsp almond extract
1 tsp vanilla extract
Directions
Pre heat oven to 400
Whip all ingredients together
Treat pie pan or 11x7 brownie/ biscuit pan with no stick spray
Pour egg mixture into pan
Place in oven on top rack
On bottom rack, place another pan filled halfway with water
Bake at 400 degrees for 15 minutes
Turn oven down to 350
Bake an additional 30-40 minutes until knife inserted comes out clean
Makes eight (8) servings
Variations
Sweeten with granular Splenda (add 96 cal/ 24 carbs total recipe; 12 cal/ 3 carbs per serving)
Flavor with rum or orange extract
Serve with sf syrup of your choice

Found at Publix but I am sure you can find it in other stores, Light and Fit has a new yogurt that is carb control and sugar control! It only has 2 grams of sugar, 3 carbs and 5 grams of protein! It looks like vanilla is the only flavor. This is even better than Greek yogurt that has 7 grams of carbs.
LOW CARB BRAN MUFFINS
Ingredients:
1 1/2 cups almond flour
1 cup wheat bran
3 tablespoons Splenda
1 teaspoon baking powder
1/2 teaspoon salt
4 eggs
1/3 cup water
1 cup shredded zucchini
Instructions:
Preheat oven to 350 F and spray muffin tins with nonstick cooking spray.
Mix the dry ingredients together. Add the eggs, water and zucchini, and mix thoroughly.
Fill muffin tins about 2/3 full and bake for 15 to 20 minutes.
Makes: 12 muffins
