CAULIFLOWER-SOUR CREAM "FAUX MASHED POTAOES"

Cauliflower-Sour Cream "Faux Mashed Potatoes"

Ingredients

1 head cauliflower (2 pounds), cut into florets (about 8 cups)
2 tablespoons sour cream
2 tablespoons heavy cream
1 ½ tablespoons unsalted butter
1 teaspoon salt


Directions:

 Bring a large pot of salted water to a boil over high heat.
Add cauliflower florets; coo****il tender, 10 to 12 minutes. Drain.
Puree cauliflower in a food processor, adding florets in batches.
Add sour cream, heavy cream, butte

 Thanks for the recipe. I make a mock potato salad only difference is I dont puree the cauliflower, I just chop them up and add onions, celery, green onions etc with light mayo and mustard. Sometimes I slice up pickles and serve it with a plain burger.  

DO you have a forum that I can follow?  I was banded 2/13/10 and only lost 20lbs... kinda plateaued but never was given a strict diet to follow.  Low carb worked well when I wasn't banded, I can only imagine how well I would do now.  Anyway, even if you have some guidelines to follow/rules of thumb would be appreciated!
