BBQ Pulled Pork

Ingredients:

1 pound boneless pork loin, thinly sliced
2 tablespoons vegetable oil, divided
1 cup sliced onion
1/2 teaspoon dried oregano
Salt
Freshly ground pepper
3/4 cup low-carb barbeque sauce  (see notes below)

Directions:

Heat 1 tablespoon vegetable oil in a large skillet over medium heat. Add onions and cook 5 minutes or until lightly browned; set aside.
Sprinkle pork with oregano, salt and pepper.
In a large saucepan, heat remaining tablespoon of oil over medium-high heat.
Cook pork in batches until lightly browned.
Add onions to saucepan and pour in barbecue sauce; mix well.
Reduce heat to medium low and cook 20 to 25 minutes, or until pork is tender.
