Hmm this sounds really interesting....gonna have to give these a try.
I for one don`t usually like bean salad but I really enjoyed this one. I will definitely make this.

I made these today and they are good- I would probably soak the chickpeas overnight in the vinegar as I didn't find them too vinegary with just boiling them etc- and I wasn't on top of the last 5 mins so some got a bit over done- but on the whole they are very very good!!

salt and vinegar chick peas
2 cups (or whole can) of chickpeas, drained and rinsed
3-4 c white vinegar
sprinkle of salt or to taste
dab of olive oil
bring chick peas and vinegar to a boil in a medium pot
remove from heat and let soak in pot for 30 mins
preheat oven to 425
lay tin foil over a cookie sheet
when chickpeas have soaked, drain and put back in the pot
toss with olive oil
lay in a single layer on the cookie sheet and sprinkle with salt
put in the oven for 20 mins
flip chickpeas
bake for another 20 mins
keep an eye on them for another 5 mins to make sure they done' burn (this happens fast if it's going to)

I agree 110%....for those that didn't make it out last night...it was a wonderful "gab fest" with lots of good WLS food!! I'll post my Bean Salad recipe here...this makes a very large salad...
6-8 cans of your favourite beans, plus a can each of yellow and green, all drained well and rinsed, plus sliced thinly a pepper (green or red), and a sweet onion. Mix well.
for this much I tripled the liquid...1 cup of white vinegar, 1 cup splenda, 1/2 cup canola oil, a good liberal shake of black pepper....shake up very well, and pour over your salad
You can personalize this bean salad...but this is what I use...It lasts quite well in the fridge up to a week.
