  Crepes

4 eggs
1/2 cup ricotta cheese
4 T flour
pinch of salt
4 T milk

Whisk all together and let sit for 15 minutes. In a small frying pan sprayed with pam, pour in about 1/4 cup of the mix, swirl in pan to spread out like a regular crepe. Do not flip it, after that side is no longer wet looking slide it onto a big cookie sheet.

I made the crepe batter but didn't start making the crepes until the filling was made.

Filling

1lb ground turkey Italian sausage or italian sausage removed from the casing browned
1 block of low fat cream cheese
1/2 cup fresh grated parmesan
1 bag of baby spinach
1 egg beaten for the egg wash

Okay this differs from the original a little, I made more filling than she did and she also made another filling but I didn't write that one down.

Brown the sausage, remove and pulse in your food processor(that is my little trick) Add back to skillet and add spinach to wilt. Remove from heat and add cheeses, mix until combined. Cook your crepes and place on the cookie sheet, filling and folding each one at you go. Brush on the egg wash and bake in a 350 degree oven until golden. I forgot to sprinkle the parmesan cheese on top before I baked them. Serve them with your favorite marina sauce spooned on top.

Topic: Muffin in a minute recipe plus
Hello Everyone, This recipe has been asked for.  I'm trying to find where I have the added versions as well, but here's the basic one...

========================================= Muffin in a Minute 1/4 Cup Flaxseed Meal
1/2 teaspoon Baking Powder
1/2 teaspoon cinnamon
1 tablespoon Splenda (optional)
1 egg

Mix everything together in a coffee cup. Cook for one minute in the microwave. Turn the cup upside down to take the muffin out. If it looks wet, let it sit for a minute or so. I have these for breakfast. You can add blueberries, or try other additions. Some people add a tablespoon of cream cheese before cooking.

Carbs 9 grams
Fiber 8 grams
Sugars 0 grams
------------------------------OK  now if you want to make this for a bun, let's say for hamburgers...  forget the cinnamon and splenda and ADD a little salt, pepper, garlic powder and maybe some onion powder...  Use whatever spices you like.  And instead of putting this in a coffee cup I use a soup bowl.  Now you  can have a bun...  Enjoy!

I haven't seen this discussed and I can't believe it because it is a fantastic one-person dessert that has great food value
and it's the best, its really a "Muffin in a Minute" with a little more.
I've made it for dessert (half size) and even for a leisurely breakfast. Put Cinna-Bliss on it, WOW! and a squirt of reddi-whip
I've made it with sf apple pie filling (Comstock)

Apple Cake - 5 Minutes Microwave

Peel, core and slice an apple into thin slices
Spray a cereal bowl with PAM
Put the apple in the bowl and sprinkle with cinnamon and splenda
Put in the microwave on high for three minutes

While the apple is cooking - mix in a coffee cup

1/4 cup flaxseed meal
1/2 teaspoon baking powder
1 teaspoon buttermilk blend
1 tablespoon sugar free applesauce
1/2 teaspoon cinnamon
1 ounce DaVinci sugar free vanilla syrup
or 1/4 teaspoon vanilla extract and 2 tablespoon Splenda
1 egg

Mix together with a fork, then mix into the cooked apple
Put back in the microwave for 2 minutes
Turn onto a plate
Add sugar free Cool Whip

Cannoli Pudding

One 15-ounce container part skim ricotta cheese
2/3 cup Splenda Granular
1 teaspoon vanilla extract
1 Tablespoon sugar free instant vanilla pudding powder
About 1-ounce sugar-free chocolate, such as Valor, shaved
1/2 cup coarsely chopped shelled pistachio nuts

Puree the ricotta with the splenda, vanilla and pudding powder in a food processor until smooth and creamy. Transfer the mixture to a medium bowl and chill before serving. Place a swirl of the cannoli cream into a martini glass or small dessert dish and sprinkle liberally with the shaved chocolate and chopped pistachios; serve immediately.

I recently had blood and urine tests done for an insurance policy and when I got the results back, even though my degree is in laboratory medical technology, I couldnt interpret the 'high' and 'low' results on two of the tests... so I got online to see what could cause these numbers to be out of bounds. My goal was to find an accurate and easy to read souce to help me read my results. As you guys know I am big on being our own medical advocates, and not having blind trust with the medical community.

I found that Web MD is an amazing resource for info on lab results... you can easily look up the name of the test... such as in my example 'Uric Acid' and read in plain language what the test is and what could cause not only a 'high' result, but the typically ignored 'low' result. I have low uric acid, which is a sign of either liver disease ( I had a very 'fatty liver' at the time of my surgery, but that condition would have cleared itself up once I dropped the Morbidly Obese nametag) or Not Enough Protein in the Diet. Normally people have HIGH uric acid, and this is indicative of too much meat in the diet.

The other out of range value was SGPT, which is now called ALT... mine was too high. When I located this test in the Web MD list, and read the page, a high value is indicative of Thyroid Disease, which at the time of the test I didnt realize was causing me difficulty. So this now makes sense... and gives me something to compare to when I get my post tyroid treatment tests done next week.

Even numbers that are within the normal limits should be looked at... my Creatine was within limits, but barely... it was right at the low limit. Normal was .6 - 2.2 and mine was .7 so a very low normal reading. When I looked this test up, a low creatine level is indicative of a diet very low in protein. This result paired with the low uric acid value, tells me that the Protein Queen isnt getting enough protein in her diet.


My point of all this, was that every one of us should put this Web MD link in our Favorite Places... so when we get our lab results back, WE are capable of looking at the numbers and seeing for ourself what is going on.

My cholesterol was 157... before my surgery it was 250!

Note that acetaminophen (Paracetamol; Tylenol) is not on this list. Acetaminophen belongs to a class of drugs called analgesics (pain relievers) and antipyretics (fever reducers). The exact mechanism of action of acetaminophen is not known. Acetaminophen relieves pain by elevating the pain threshold, that is, by requiring a greater amount of pain to develop before it is felt by a person. It reduces fever through its action on the heat-regulating center of the brain. Specifically, it tells the center to lower the body's temperature when the temperature is elevated. Topic: This past week!
Hello Everyone,
This past week was tough for me!

However the Alumni group on Tuesday night went well and we had a chance to see a lot of faces we haven't seen for a while.  I hope everyone comes back again next month.

I gave out all my Clicks samples, so I can't wait to hear how you all liked the coffee protein.  Don't forget to purchase it at www.amazon.com and do the auto delivery, YOU SAVE MONEY... on shipping and the product.  Usually it's a little over 20.00 BUT.....  if you do the autodelivery I pay about 17.00 and change and that's including delivery.  Love it hot and cold.

I'll have to figure out what I'm going to bring next month for our show and tell...

Topic: Do you feel tricked?

Hello Everyone,
This morning I felt tricked, like it should have been an April Fools joke.  Yesterday we had such a beautiful day.  I actually sweat a little!  Yeah!  Thinking ok, I made past this terrible long winter.

So I put on a tank top and a pair of shorts, yeah!  I walk out my front door and then it hit me!

COLD winds..........  What............. damn I ran back in to change and put on pants and a heavier top with a sweater.    Needless to say I was not a happy camper.

How are you all dealing with this weather?

I hope better than I am!
