Just One Peanut Butter Choco Chunk Cookie
Pinkie had posted about her troubles with the pb cookies...how they are a favorite of hers but she can't trust herself with the whole batch. I suggested - and wrote out - a mini recipe of the original (halfway as a joke!) so that she could have a couple cookies...savor every crumb...and not be tempted by a plateful.
The mini version WILL work...it's a real recipe. I didn't realize that so many people would think it's a fabulous idea...and that people also didn't realize that it's an actual recipe. Since it doesn't have flour or other 'cookie-type' ingredients it does seem like a joke.
This is actually one of our most legal desserts, without all the unnecessary extra carbs that often come with treats.
1 tablespoon peanut butter
1 tablespoon Splenda or Nature Sweet Crystals
1 teaspoon egg substitute
one drop vanilla extract
1 teaspoon Valor dark chocolate chunks
Preheat oven to 350 degrees. Combine peanut butter, Nature Sweet, egg, and vanilla in a small bowl. Drop dough by 1/2 tablespoons onto ungreased or parchment lined baking sheet. Crisscross with a fork dipped in splenda. Bake for 10-12 minutes or until set. Allow to cool for a couple minutes on baking sheet and then remove to wire rack to cool completely.
You can add chocolate chunks, extra peanuts, unsweetened coconut...anything, really. Or do as Pinkie does...make the cookies very thin and spread sugar free jam on the bottoms so that you can sandwich them together. (OR...the possibilities are endless!...make an indentation and put 1/4 teaspoon sugar free jam in the well before baking.)
