45 Second Chocolate Cake for 1
QUOTE (Linda Farnsworth from BE @ Jul 22 2009, 02:19 PM)
This one I found - uses no eggs - I modified it for us and it's really very good..
DON'T OVERCOOK or it's rubbery...start out with 35 seconds - don't go a minute all at once in case it doesn't need it. Then add 5 seconds as needed. I don't know if I have a super-duper microwave or what, but mine never takes one full minute. It should still be moist on the bottom - not completely dry - it will continue cooking as it cools.
45 SECOND CHOCOLATE CAKE FOR ONE
2 tablespoons flour
1 1/2 tablespoons Splenda
2 teaspoons cocoa powder
pinch of instant coffee crystals
1/4 teaspoon baking powder
Pinch salt
2 tablespoons milk or Hood Countdown
1 teaspoon olive oil
Drop vanilla
Spray a small coffee cup with PAM and mix all ingredients in cup. Cook for 35-45 seconds...allow to sit for a moment and serve.
EDIT: Could have been the PB2? I didn't use it...and I changed the recipe to take it out and use coffee crystals instead. I used the 1 tsp PB2 in the first one, but decided I liked the coffee better!
PB2:
It is a dehydrated peanut butter. They extract a majority of the fat, so it has considerably less fat and calories than regular peanut butter. You can reconstitute it with water and spread like peanut butter, add a spoonful of the dried stuff to shakes, baked goods, etc. It is quite versatile!
Total Recipe: 110 Cal; 2 g Protein; 5 g Fat; 14 g Carb; 1 g Fiber; 0 g Sugar; 0 mg Sodium
Made this today, very good for a treat and it's only enough for one. Which is good because we can't overeat with it. And it satisfied my choclate craving. LOL
Try it you'll like it, :D
Hugs,
