Fresh Mozzerella ( couple of slices of a large ball)
a few roasted red peppers (either homemade or water packed ina jar)
a drizzle of pesto (maybe 1-2 tsp)
balsamic vinegar

layer the mozz & red pepper
drizzle the balsamic over top of the layered cheese & peppers ( I love it so I use about 1/8 cup)
drizzle the pesto down the middle of the stack.

Grab a fork & enjoy!

PS--another delish variation (particularly in the summer) is to omit the pesto, and replace with about a cup of roasted small heirloom tomatoes.  I get a mixed quart of grape/cherry size heirlooms at the farmers market.  I put them in a rammeken or other oven proof dish, drizzle with a tad of olive oil, salt & pepper then roast in the oven for about 30 minutes ****il they pop).  MMMMM, I am making myself hungry

Hi Karin,

I lost 100 lbs (from 255.5 to 155.5 ) initially, then gained 34 lbs to 189.  I posted what I have done in a seperate thread to get the weight back off.  I just wanted to emphasize that it has taken me 10 months to lose the weight, so as one of the previous posters aid,be realistic and don't expect it to come off overnight.

For me, when I get the iidea that I am going to lose 20 lbs in a month, it never happens, and then I get peeved & throw in the towel. 

You can get back on track.  Be patient and take care of yourself.

Oppps....I'm realizing that to some people it appeared that I was taking a poll to decide how to handle the weigh ins. What I meant was that you just can pick your favorite choice/option and just go ahead and use that one. All I'd recommend is whatever you decide to do, just try to do it the same way each week for consistent results.

I work weekend nights (sat and sun nights as a nurse) so my weights on Monday AM's are never accurate.  I usually go with Wed AM weights and always have.  LOL So I guess option 7.. but I will go with the group. I probably will not count my weight on Mondays tho b/c I drink all night and on my feet etc.. it just doesn't work to weigh after all that.

I am currently staying M-F at a Hope Lodge about 75 miles from home while I undergo radiation for my cancer.  The 3 computers at the Lodge wor****assionally, and only one of them lets me on the OH site.  The other 2 have most sites blocked.  So I may only check in here on weekends. But at that time I will check all the entries.  I also weigh everyday.  And I generally go with my Saturday weight as the one I go with for gains or losses.

I think this is a great place to be accountable.  Thanks, John for getting us (me) motivated.

OK John,

I agree taking account -  for me publicly  - make sense, posting it outloud makes it harder to put myself into denial...

I vote for a Monday posting since I am not so faithful about weekend food tracking, posting on Monday morning might help keep me in line over the weekends - BUT I will go with the flow...

Soon as I see the post I'll jump on...
