May 14 home from vacation...My veggie soup recipe.
We had a wonderful mini vacation, but it is good to be home. Too many buffets though! It is amazing the amount of food I can eat with my "1 oz. pouch". I always started with a large salad and light dressing. Then I would eat a good sized serving of meat and follow up with the potatoes or pasta. A couple hours later I would be hungry again and find a snack. It is good to be home where I can have low calorie food around me. My veggie soup is filling and low calorie. It can get me through a hungry day with fewer calories. Tri
My Veggie Soup Recipe:
broth (I always make mine from bones)
2 cups of diced celery cooked in the broth
Add 12 oz. of frozen mixed veggies and 12 oz. of frozen green beans
Add a 15 oz. can of diced tomatoes with flavorings (Italian spices or chili ready or green pepper and onions)
I store this in the refrigerator and microwave as I need it.
