April 30 My cheesecake recipe

I feel great this morning. I ate 1850 calories of healthy food yesterday. I ended up eating 10 meals. I drank 56 oz. of water and too much coffee. My goal is to drink 64 oz. of water and less coffee today. I am determined to do whatever it takes to get under 200 lbs. This is going to take a long time, but each pound makes me feel healthier. Yesterday I baked a cheesecake. This is my recipe:

Coconut Lime Cheesecake

Process in a food processor until smooth:

15 oz. fat free ricotta cheese (high in calcium and lower in salt)

16 oz. fat free cream cheese (high in calcium, but salty)

12 oz. dry curd cottage cheese (high in calcium and low salt)

1/4 cup corn starch

1/2 cup Splenda

5 eggs

1/4 cup lime juice

Stir 2/3 cup unsweetened coconut into the mixture.

Spray a springform pan with cooking spray and spread 1/2 cup granola crumbs on the bottom for a crust. Pour the batter into the pan and bake for an hour at 275 degrees. Turn the oven off and bake for another 30 minutes. Cool completely and then refrigerate.

Spread 1 container of lime Greek yogurt on top of the cheesecake. Refrigerate.

Serves 12
