Grab and Go

Been trying to freeze some meals ahead of time to make late night dinners easier. But I have been finding the snack idea's through my day are very limited (usually just string cheese, few almonds, or a yogurt). I would love some more idea's on snacks. My husband is great about eating what I eat and not snacking or cheating (at least around me) but he also agree's we need to find a snack for evenings when we are just sitting and watching tv after dinner has emptied from our belly's but we still have a while before bed and we get a little hungry. I need quick, no/low carb, grab and go type of snacks. I have never tried any protein bars so lately been wondering if I should give them a try. But I am a little worried that I may like them too much and it could lead to bad choices. Probably just a mental thing I have with them and candy bars in general.

for me - it is pork rinds and no sugar add salsa or some other type of a dip - like good yogurt tzatziki.. (you could probably add some protein powder to it)

I make avocado mousse... or I bake "dessert like" breads using things like flax meal , protein, powder,  butternut squash, etc instead of flour...

I have a simple recipe : almond butter, eggs, protein powder mixed with shredded coconut or flax meal.

I make keto-paleo "breads" and "cookies" ...

check egg face blog, or nom nom paleo blog.

I also make waffles...again - using some eggs, add fat and add protein powder...or shredded coconut..

I do intuitive cooking - just toss things together until they look and smell right... make it.. I make a batch - portion and freeze.

I made some 'sweet potato brownies" - but I used butternut squash, added eggs and protein powder..

they are low net carb. They turn more like a dense chocolate cake... still not too bad... when I wa losing weight - i used more of things like psyllium husks and flax meal.. that provided the texture and fiber but it was supper low net carbs..

So far I have not gotten myself to be able to get into baking or recipes that are going to take me too much time. Either I don't have the time on days I work or on my days off I have no energy to be doing much more than I have to besides catching up on chores around the house. I have started this week cooking meals for the freezer on my days off but even those are simple put into Instant Pot or crock pot type of meals. LOVE THAT! My husband loves pork rinds! He keeps trying to get me to try them. He eats bbq flavored ones. I'm going to give them a try. He has never dipped them with anything so that may be a great extra treat we both can try!! Thanks for the idea :)

it is not baking - and it really takes close to no time... check the 5 min low carb muffin in a cup recipes..

https://www.google.com/webhp?sourceid=chrome-instant&ion=1&e spv=2&ie=UTF-8#q=muffin+in+a+mug+low+carb

They used to be "life saver for me":

mix egg and some protein powder with sweeteners and some fat in a "large mug" Microwave on high - watch as things raise up... and turn it off when it stops... take it out- allow to cool.. eat...

Some are elaborate - others- very simple.

I would mix the following: 1 egg, 1/2 tbs of flax meal, 1 tsp of oil...(any oil) 1 tbs of milk (I used almond) pinch of salt- pepper -caraway.. . pinch of baking powder. Mix very well.. nuke for 1-3 min (depends how dry you want i, cup size, etc) . I used to use that as "bread". Or i would add sweetener , cocoa, and have a "chocolate cake..".

Thanks for the link,  I have been seeing a lot of the muffin tin portion control recipes.  Been thinking about making them.  I know prep first.  I need to research healthy recipes.  My husband and I have cholesterol  that is creeping up. and both now are on high blood pressure meds.  something with lots of vegies I think will be what I look for today and try it.
