Second day I have woke up very tired!! Unusual for me. I tend to get up same time each morning weather I have to work or not. Don't even need to set an alarm. But the last 2 days I feel like I could stay in bed for hours more I don't really think it is the change in how I'm eating because once I'm up and moving and get my coffee in, I feel pretty good (although still not as much energy as normal). But I am currently having dog 'issues' in the house and figure it's that for sure. Have to figure out a solution to the 2 of them being able to sleep together or something so I can start to get sleep! Any ways, busy work day today. Should be putting some ham in the crock pot right now so that dinner is set and ready when I get home but can't yet muster up the energy to move much more than my fingers at the moment. But ham is easy so I'm sure it will be a good food choice day for me.
Investing in a good electric pressure cooker was a great idea for me. For days like that when I can't manage setting things up way ahead of time...and what takes hours in a crock pot - take minutes (or maybe 30-45 min) in my pressure cooker when I get home...
I have Instant Pot brand - the 6 quart. And I gave some of them (over last 2 years) as gifts. But I also not "Gowise" 8 qrt because the IP 8 was much more expensive and I heard good things about the Gowise.
I.e. take. Fresh or frozen chicken - top with salsa seasoning, some salsa.. (add some water to getbsteam) Set for 20-30 min.. Walk away - come back to "taco chicken" that can be speeded and eaten as it - or use as toppings on salad, or zoodles...
I hate cutting butternut squash.. Now I just put it whole - or cut and de-seed, for 10 min high pressure.. Take out..scoup the fresh.. And eat it... (i added good carbs to stop weight loss)
Same can be done with a so popular - low carb spaghetti squash. No need to wait 30-45 min roasting in the oven. Some make the meat sauce in IP and just put the whole squash on top of the sauce so all is done together.
I make lean beef spaghetti sauce in my IP. Use lean beef, brown it in the pot, top with RTE to Katie sauce (low sugar) or crushed tomatoes and lots of spices... Set for 15 min ... Yummy... My BF gets it with pasta - I get zoodles (zucchini noodles)
There again ...I made you hungry for good food... ...
And my eyes can eat more of that than I gut allows me to. Very filling.

Thank you for your reply! I have been reading about the instant pot for the past 3 days now and my husband is bugging me for Christmas idea's but have not wanted to say this just yet until I did some research to make sure it wasn't going to end up a waste of money and kitchen space! I don't mind the crock pot taking hours since I'm at work all day anyways. And my husband often uses the pressure cooker when we both get home late and the crock pot wasn't used so I was not sure if it would end up being much different than that. I think now I am going to suggest it and give it a try! Next idea is the for the hand held vegetable spirlizer (not sure what the name of them is). Thanks again for your opinion :D And YES you did once again make me hungry-but for healthy options so not such a bad thing after all.
I used to have stove top pressure cooker. I used that thing 2 times in 15 years. Sold it. Bought the IP.
They had greatvsale on it on Black Friday. We both 2 for gifts. And... I bought the 8 qrt GoWise for me.
I make a lot of soups (chicken or beef and veggie - ) and the 6 qrt was just bit too small (i was over-filling it - not a good idea).
