Monday cardio and cafe...........

been MIA the past few days.....been too busy to post.....I am having 39 people over this next Saturday and Sunday (17 spending two nights, some staying longer) to celebrate Thanksgiving !  Been busy getting groceries (made a trip to Amarillo ....an hours drive....and spent nearly $400) cleaning house, and washing bedding......😝. Plus organizing the cooking schedule for all meals involved !  Still need to buy turkey, ham, and fresh foods !!

 Hubby is sick.....I think he has pneumonia...hoping he goes to doctor today.   He IS stubborn!!  He was supposed to finish the final details of remodeling, but I told him if it gets done, fine, if not, fine.  To take care of him !!!  Say a prayer that he listened and goes to the doctor !!   He sees his lung specialist on Dec. 3 and he thinks he can wait until then!!   Men !!!!

my eating and exercise today are.......morning vits taken.....liquids started.......walking......doing good

breakfast......coffee/miralax. (yep....I am back on the miralax....didn't like how my irritable bowel was reacting without it)........ Protein shake

lunch............turkey/cheese/roll up.......

snack............Apple/pb

dinner............chicken/veggies

snack..............cottage cheese

everyone stay warm and remember.....IT IS NO CHEAT NOVEMBER !!!

Good luck on the party... wow.. that is so many people..

Sorry to hear about you hubby... men are stubborn.. worse is that once they get so sick they need hospital stay and we are the ones who need to take care of them in the hospital plus all the house chores...

I am finally doing - feeling better.. My gut is still sensitive, but worse is over and things are "moving on nicely" no need to do this...

But I know i need to take it easy next few days...really "baby" my gut... I do have motivation and energy - so  I know I can do it... 

I made amazing - easy and fast - cookies and bread like "buns" over the weekend.. They were too good ...and I ate too many... (story of my life) but overall - this is great... 

 

Made almond/coconut "buns"..they are amazing. 
2 cups almond butter
4 eggs
1 cup (or more if needed) almond Milk
2 cups shredded coconut
Pinch of baking soda (1/4 tsp)
Salt, pepper, ground caraway seeds.. Any other spices...( or for cookies version : stevia and splash of vanilla)

Mix all together.... I used 2 muffin tops pans to make 2x12 buns ( "cookies" ).
Baked in 350F oven for 15-20 min . i made one batch with stevia to have as cookies", another savory, with all the spices... So good...
