I'm in Anchorage Alaska for business.

Busy, and trying to maintain my eating... I eat to many nuts and drink too much wine..But other than that i stay away from sugar, carbs and starches... I try to drink a lot of water...

So far so good... I try to make the best choices from options that are available to me.  Choosing plain chicken, or grilled salmon with some veggies... Or cobb salad with dressing on a side.  It is what it is.   Food is only a part of life. Not a reason to live . As long as i remember that - having a few not so good meals is not going to ruin my trip... Too much wine may... He he he...

Keep plugging along ,

Is it beautiful in Anchorage ?    Or do you even have time to enjoy ?    I have always wanted to see Alaska.  Maybe my hubby and I will go someday.

Dinner sounds yummy !!   Do you love spiraled veggies ?    Do you use a Veggiti ?   I have been thinking about getting one and don't know if that is the brand I want or if it will even be useful.   Keep posting.....we are in this together and I love reading menu ideas.  Helps me beat repetition.

I will keep posting.  I am very serious about food.  That might be amiss with what works for some people but I gain weight when I eat crap (fast food etc.).  When I meticulously plan and make meals for my family (including husband who had gastric bypass two months after me), I focus more on nutritious, healthy, and delicious food.  It's been working for about a month.

As for the spiralizer, I use a brand called Paderno.  I got it at William Sonoma for about $40.00.  It's great.  It's a little heftier than the Veggiti and has attachment that customize the texture of your new "noodles."  If you're really thinking about getting one, the best advice I got is to spiralize whatever you want and then heavily salt the "noodles" and let them sit for quite some time while you cook your protein.  The "noodles" are not appetizing when they're soggy.  That was my problem with the kelp/sea noodles that I've used in the past.  I especially like that the veggies don't really need to be cooked.  Just thrown into whatever sauce you've cooked with the protein.  Briefly heated, they retain an 'al dente' texture.

Thanks for the encouragement.  I've been reading these discussions every day but thought I might as well contribute.

Thanks.....I will get a Paderno.......I am a kitchen gadget fanatic and I love to cook.  the Veggiti looks like it won't last long.  I am not much into pasta, but I LOVE veggies.   This would be a great way to limit pasta for my husband.  😀.

I gain weight easily and really fight my weight....always have.......my sister died weighing 650 lbs from weight related complications. I try to cook and eat healthy. Good luck with you and your husbands weight loss journey !
