Morning!

Back from vacation and looking forward to routine again.  Had a lousy day of motorcycle riding yesterday.  400 miles and most of it in rain with intermittent fog.  Was soaked and cold but grateful to get home safely!

Didn't do well with eating but must have made up the difference in exercise, because my weight is unchanged.  Yah.

Today:

coffee + Miralax

b- egg, cheese

have to grocery shop so not sure about the rest of the day.  Will definitely be whipping up a batch of shredded squash (zoodles)

No reason why I can't get to the gym also.

Glad to hear that you arrived home safely.  Hope you had a nice time.  Question...how do you prepare your "zoodles"?  I bought a Veggetti a few weeks ago, and I'm having a ball with it.  I've gotten a few recipes from various sites, and I have created a few of my own (my favorite is zucchini "noodles" with low cal Alfredo sauce served with my meatballs in marinara), but I'm searching for more.

I've also done a tuna casserole that I thought was pretty tasty.  Just looking for lots of variety since I eat them several times a week.  Thanks!

i stirfry them with onions, salt, pepper, etc.,...

I will eat some as a side with a little soy sauce (even with my breakfast eggs)

i also will eat the with a melted slice of cheese and then add cottage cheese.  Kind of like a Mac n cheese... You could use ricotta instead..I haven't tried that.

i have also had a little as a side with a little butter and grated cheese....I don't do that often, but satisfies that need for a " comfort-type" food.

 Gonna try them all.  I eat them with turkey bacon and eggs for breakfast too.  Really gotta try the soy sauce on them...sounds delish!
