Monday cafe and cardio..

Monday..ugh....i am tired just thinking about the work week.  But cats need cat food. Lol.

Today eats: ( need to change - I baked cookies in the morning)

Coffee w Miralax, x2

Protein cookies... 

Tea , water

Protein shake 

Sausage w cucumber / tomato salad.

Veggies frittata.

Protein shake

Lns : nuts.

 

my protein cookies are simple: Get eggs, some unsweetened coconut milk, some peanut or almond butter, mix together.  Add protein powder mixed with flax meal or ground chia seeds (fiber) and some baking powder, additional sweetener if needed and pinch of salt.  bake in muffin pan or on a cookie sheet.. I dry mine in the oven so they are portable and don't get bad (spoiled, moldy) when I keep them in the car or in my purse.  If I don't have nut butter - I use coconut oil or another fat...Mu cookies have very low carbs + proteins and fat. 

i.e. this batch - 4 small cookies have 14 gr of proteins, 8 gr of fat, and 5 gr of carbs ( but 2.5 of that is fiber)  I used to use whey proteins but due to allergy to whey - I had to switch to vegan - non soy - protein mixes...

WooHoo !!   School is back in session !!    I really do LOVE my job !!!

I had a busy weekend, not my typical weekend before school starts.  I usually get things prepared for lunch all week and iron at least a dozen blouses.  AND I usually clean house really well......   Not this year.....I did buy healthy food choices, but I am flying by the seat of my pants on my clothes and my meals.  Got up this morning and threw an iron over a blouse....not usually how I start a day.   I am anal about getting ready the night before.  Threw some food in my lunch container and away I went !   AND my house is a disaster !

We are getting granite countertops in the kitchen and both baths, putting new cabinets in our bathroom and moving the old ones into utility room to make a half bath.  I spent my weekend texturing walls in utility and bathroom.....got my exercise, that's for sure......I am so tired and sore that I can hardly wiggle !  

My son that lives 5 hours away is coming on Friday to help us get cabinets installed and things ready for the granite.  Then the plumber will come to connect the sinks and plumb a new half bath.......it will all be worth it , but right now I am sore and tired !!   Plus, my house is a wreck !   

My eats for today.......miralax/coffee......vits........ Water........all done

breakfast......in a hurry, grabbed some grapes...not very good, but I did put protein powder in my coffee

lunch..........turkey, cheese, sandwich and SF pickles 

snack.........?    Have more grapes or applesauce handy

dinner.........who knows........hopefully hubby will have a plan.....the roofer is coming today to show us some roofing options.......
