Monday - Cardio & Cafe
Happy Monday! After a 3 day weekend I really feel like I need to hide under my desk. Yikes!!
Eating today is looking like:
commute: coffee
Breakfast: scrambled eggs with salsa & cheese
snack: small oj & peanuts
Lunch: Tuna Salad with cucumbers and reduced fat wheat thins
snack: 1/2 apple with peanut butter
Dinner: BBQ chicken breast and tossed salad
Exercise tonight is the full pt workout as well as a swim (as long as the weather cooperates) if no swim then I'll find something to do inside.
Yall remember to take those vitamins and drink the water.

S: sweet potato carrot ginger coconut curry soup (it's a mouthful to say but man is it ever good!)

D: pork chop with some cooked apple in cinnamon with raisins and dried cherries added

Cardio
gym at lunch, will probably do stairs as a warm up (climb 40 flights) then will do weights
try to go for a run tonight.

So glad that everyone had a great and joyous weekend with family and/or friends. I had quite a few visitors over the weekend as I'm still on my road to recovery. I had bad night last night, and wasn't able to work from home today.

I love salsa- eggs.... But I live mine poached in salsa. I put salsa in skillet, warm it up until bubbles, make 2 wels and drop 1 egg in each, reduce heapheapt asnf cover it up. I serve that wityh tortilla chips for my BF and pork rinds or Terra veggies chips to scoop the goodies. Sprinkle chopped cilantro, add avocado... OMG... (Also great as dinner)
