Back On Track Together
Thursday - 4/24
It's thirsty Thursday...Bottoms up!
I'm so proud of myself, there was a scheduling problem for me to be able to use the pool at the Y after work yesterday. Most days/months/years I would have taken that as my reason/excuse to not go. I called my cousin and went with him to the health club he uses and used their pool to do my knee therapy. The reward was getting to soak in the huge hot tub afterwards (something our Y doesn't have). I still feel like a Bus is parked on my rear end but the calves, knees and hamstrings aren't screaming at me as bad as I expected. Yeah ME!!!!!!!!!!!!!!!!!
Today's plan is much the same as always. I think it's time to shake things up a bit. I'll do some menu planning this weekend after I do a little pantry inventory.
Commute: Coffee
Breakfast: Bagel with cream cheese
Lunch: Seafood Salad with lettuce & tomato on a low carb wrap (this will fini**** up)
snack: Greek Yogurt and small handful of nuts
Dinner: Mexican Crock pot (Rotel, taco seasoning, black beans & corn with chicken breast)**
Skinny Man took the meat out of the freezer this morning for the crock pot. Since I buy in bulk at Sam's Club I seperate out portions into freezer bags of skinless boneless chicken breast and boneless pork chops. Once they're frozen they look very similar. I keep them in 2 different parts of the freezer so I'll know. My freezer now looks like a bomb went off in it and nothing is organized. I really think I have 1 chicken breast and 1 pork chop in the crock pot. This is the one recipe that I think will be forgiving enough to do them both at the same time. I'll let you know tomorrow.
In the meantime, yall take those vitamins and drink tha****er.

How creative of you to create a forgiving recipe for both chicken and pork. Make sure you tell us how it turned out.
