We've got family visiting this weekend so I've taken a break from the housework and laundry that I usually obsess over on weekends. Yesterday was pretty much a "me" day with my sister in law. We went shopping and out to lunch. She told our waitress that she drove over 6 hours for one of their signature salads....They ARE that good.
Skinny man has taken my bike apart and repainted it and is putting it back together now. It looks FANTASTIC. We're about to run to Walmart for a master link for my chain and I'll be biking around the neighborhood this afternoon. Now if only the weather would cooperate. It's on the cool, windy, overcast side this morning and looks like it could rain any time. This goes without saying BUT....I need some sunshine...sooooooooon.
Skinny man and his brother are talking about cooking on the grill this afternoon. That means this chick won't have to cook and I can guarantee that it'll be pure protein. (They only know how to cook meat)
Have a great afternoon.

Time with family is always good ;) My hubby does a lot of grilling, which is just fine with me ! Woke up to late for breakfast, so I'm adding an extra protein drink later in the day.

Saturday was cold and rainy. We did a lot of stuff .. Went to chiropractor go to international festival and watch some performances, including demonstration of some martial arts. Then Costco, back home cooked dinner and we went to as movie - the new Muppet's movie. It was fun. Very busy day.
Today is a beautiful sunny day, but most oif thee day would be about my rental.. Showing it, getting items for it,. And so on...
I am dealing with my guts.. I either have runs or constipation.. Still have issue to figure out "the Happy middle". I think I am partially to blame for constipation - eating food thast I know I am allergic to may cause small and large intestein swelling and irritation. I really need to get my head straight and stop doing things that hurt me. I am getting there.
On as good note - I am back with food experimenting - trying to come up with quick - easy andf tasty snack ideas that do not have dairy, soy or gluten, or FODMAP foods yet are tasty, and are protein rich.
So far I am able to make 5 min brownie and some fake bread like - using eggs, coconut and almond flours. There as bit on a dry side - but they taste reasllyh good.
I even made a " normal" 5 min brownie like for my BF (I used Sugar for his instead of stevia in mine) and he ate his with whipped cream. He cleaned the plate so I guess it was OK.
I mix an egg, coconut milk, cocoa, coconut and almond flour, add stevia and pinch of salt and a pinch if backing powder. Mix all very well, put in rammekin, and nuke for 2 min.
I am still trying to get the portion right so the batter it is not too thick or too thin. Taste is there. For breasf like - I sdtip the cocoa and stevia and add more salt and pepper. I plan to use some flax meal and caraway seeds in my next batch
