Good Monday Morning Botts:

I swear to you the weekend comes and goes so fast.  I have so many things that I want to get done and I am lucky if I can make it through one of them.  I did have a great eating weekend and feel really good today, plenty of sleep, so I am ready to roll through this week.  My eats for today are:

Breakfast:  Coffee & Miralax

Snack:  Quest Protein Bar

Lunch:  Unjury Protein Shake

Snack:  Banana

Dinner:  Grilled Chicken & Green Beans

Snack:  Protein Vanilla Pudding

Exercise:  Bike (be so glad to walk again when weather permits)

I hope everybody had a great weekend and I hope you are starting your Monday off great too!  Remember those vits and fluids especially during this period of cold weather.  We are at our high today of 30 degrees and will be at 22 degrees by the time I go home.  Low tonight in the teens and tomorrow is suppose to be brutal for us.  I pray for all of you in the Northern States who are having those wind chills of below 40-50 degrees, please stay in and stay safe.

We might make it to 30 today and tomorrow and be in the high 60's on Thursday !   Panhandle weather !   Sheesh !!

Had a good weekend in general.  Volunteered yesterday at a fundraiser for a 2013 graduate from my school who has been diagnosed with stage 2 lymphoma.  I made 96 decorated cupcakes to donate plus contributed cash.    I have told you that I am from a town of 1800...... Small town......we raised $5200 in 2 hours !!  We were hoping to reach $2000 !!   We are thrilled with the donation to her !  AND I didn't eat a single cupcake !!

my eats for today......

breakfast.............coffee and miralax......more coffee with protein

snack...................pear

lunch....................turkey, laughing cow cheese wedge on a sandwich thin

snack...................?   Apple or pear

dinner....................cup of homemade soup, oyster crackers ( soup is in crockpot right now !   Mmmmmmmm!!!)

Snack....................coffee ?.. maybe.........I am very indecisive today !

Congratulations on the fundraiser. That's awesome. I love it when the community turns out in mass to help their own. Good Job!!!

Awesome job on the fundraiser!  I have seen small towns come together and produce more than big cities do sometimes for the individual.  Also, good job on not eating the cupcake!  You have the power!!!

So it's going to be close to 60 degrees here today along the coast of NC and then a blizzard tomorrow. The CRAZY weathermen are predicting 6-8 inches for our little coastal community. YIKES!! Last week's snow shut the schools down for the week. I can only imagine what this is going to look like in a few days. The thing is most of our snows come in from the Northwest and pass through fairly quickly because of the warm ocean currents. Not this time. It's forecast to come in off the ocean from a stalled front and snow for the better part of 24 hours. High winds and low temperatures. I'm usually not an alarmist when it comes to weather BUT I've been barking out orders and texting with my family like a lunatic this morning to make sure everything is done and we're ready. I cannot believe that I have to get in line at the grocery store to fight for the last few loaves of bread and gallons of milk....I ran out over the weekend. Bet that doesn't happen to me again for a very, very, very, very long time.

I would love to say that I stayed on track all weekend. I did EXCEPT for the damn black walnut sugar cookies that I made. My Mammy Edie (Grandmother) was on my mind and heart this weekend. It's just one of those foods that she always had on hand. She died in 1999 at 96 years old. She never used a recipe. I nailed it the first try. Thankfully I only made a small batch because I really didn't think I'd get that lucky on the first try. I finally had to call my son and tell him to either come get the rest or I was going to have to throw them away. I was afraid I'd go digging in the trash can for them too!! Needless to say I can't make those again anytime soon.

Today is going much better:

Breakfast:  Whole wheat cheese toast

Lunch:  Mason Jar salad

snack:  Greek Yogurt & Almonds

Dinner:  Pork Chop & about 3 bites of hash brown casserole

Iris, you take care in the weather front that is coming.  I talked with my friends is south Louisiana and they are expecting 2-3 inches of snow starting in the morning.  Go get that milk and bread and prepare to be tucked in for a few days.  Isn't it funny have we remember our love ones through food?  I have had some of my best times in the kitchen or around the dinner table with some of the sweetest memories of my folks and grandparents.  I still use my mothers German Chocolate Coconut Cake recipe every time I make it, I feel mama is right there telling me not to beat it to death and don't burn the icing on the stove either.  I was around 13 when this instruction was going on.  I get it right every time now, she would be proud!

You have me salivating, sounds so good minus the walnuts.  This is why I can't  bake, I have no will power.  Well today's Monday and new day :) and a neww beginning... Have a great week, hopefully you will get all of the snow, and will not get any LOL.  Stay warm and safe.

Good morning BOTTs.

The weekend flew by...I did manage to go for that walk and listen to the playlist created by my sweet friend.  Just beautiful.

Dealing with lots of crap today at work....ick.  Today is the epitome of a MONDAY for me.  :::Deep breath::: or maybe 100 deep breaths...this too shall pass. 

Breakfast:  greek yogurt

Snack:  15 almonds

Snack:  SF hot chocolate

Lunch:  veggie burger-no bun.

Snack:  SF hot chocolate

Dinner:  chili (leftover from the big pot of Veggie Chili I made this weekend)

Snack:  string cheese and 1/2 apple
