Good Morning Botts:
It is COLD out here today! We got a small chance of snow/sleet mixture coming our way but hopefully if will change into just cold rain. Temps are suppose to get up to 41 degrees. I had a great weekend, did some shopping and yesterday made a big pot of veggie chili with cornbread. Yep! it was good. I am confessing that I also made some Nutella Crescent Rolls. They were delicious and will not be showing back up at my house this year! My eats for today are:

Cold here, too. We had 3-4 inches of snow this weekend plus the wind was awful......makes it even colder! I made potato soup and it was yummy! Not doing much more cooking until Wed. My work week ends tomorrow at noon and we are heading to Fort Worth to be with family. I will cook a lot on Wed. And Thursday......we are expecting 28 for Thanksgiving ! I love Thanksgiving ! Not just the food, but being with family. I have already been talking to myself about my food choices this week.......protein, protein, protein....good thing I like turkey ! I am also allowing myself some dessert, just not a whole piece !
My eats for today......breakfast.....coffee w/ miralax........an apple.........2 oz. chicken breast
Lunch.........the boss brought some green chile pork stew, so I will have some of that
Snack...........baked chips
Dinner...........potato soup
Snack......... Going to need more protein, so I will make a protein shake
ya'll have a great day !!
BRRRRRRRR.......I don't like being cold. It makes me grouchy. Plus it makes my knees ACHE.
I spent way too much time outside in the cold on Saturday for a neighborhood oyster roast. It's our big end of the year event. We have a lot of homeowners in the neighborhood who use their houses primarily as weekend getaways and summer homes. So this is the weekend that they al come down and winterize everything. It makes me sad. The neighborhood will seem like a minature ghost town for the next few months. It was a great event but boy did my knees ever put up a fuss Saturday night and yesterday. Bad enough that I had to call it quits at TJMaxx while I was out for retail therapy with my cousin. I never cut my shopping trips down unless the money has run out. lol
Today is going fairly well:
Commute: Coffee
Breakfast: Apple-Cinnamon-Oatmeal Muffin (Pinterest Recipe from yesterday)
Lunch: 6 inch tuna sub from subway (tossed the bread after 2 bites)
snack: cheese & crackers
Dinner: Ham, green beans & sweet potato (leftovers from weekend)
One of the things that I like best about Thanksgiving is the leftovers. I'm headed to the oldest son's Wednesday afterwork so we cooked a ham and all the traditional side dishes Saturday afternoon (yet another reason for the knees to hurt). This way we could have Thanksgiving with my youngest and both of David's kids. Now I don't have to cook again until I get to the oldest son's house- he's a sous chef who loves to cook as much as I do so it'll be fun to play in the kitchen with him again.
Get those vitamins and fluids in. Mine are in and the tea is going down fabulously. Stay warm my friends. Try and check on the neighborhood animals and the elderly in this weather. A little care and concern goes an awfully long way.

I love a good pot of potato soup! I hope you have a safe trip traveling to Fort Worth and wow that is a big family. Y'all should have a wonderful time and what a spread of food you will have. I have envy about getting off Tuesday. I am not off until Wednesday but it is a four day weekend. Enjoy your snow!
