Coping with the holiday weekend concern
Hi everyone! I've been on track all week and feel so good about it! I am concerned about the weekend coming up though. I will be away from home all weekend camping during the day but have a hotel at night.
Everyone brings something to share. You know, staples such as potato chips, greasy brats, fat filled potato salad etc. I don't want to explain (again) why I'm eating special items. I just want to blend, you know? People think it is their business for some reason.
So that said, what are you guys fixing? I'm bring lots of fruit and veggies but need a main dish. Maybe chicken kabobs? If the chicken is cooked too long it drys out and I can't eat it.
Can you eat beef? I eat very lean ground beef burgers as well as lean ground turkey. I grill them, and eat them on whole wheat sandwich thins instead of buns. Adding lots of lettuce, tomatoes, etc makes them even more filling. Eating a burger makes your way of eating look just like everyone else's, if that's a concern to you.
Hard boiled eggs (make low fat egg salad), yogurt, protein bars, fresh fruit, nuts...lots of options that don't necessarily say "dieting". Or you can try a bit of this and that here and there, with your own healthier choices making up the bulk of your meals. As for dessert, my "go to" is a bowl of fresh berries covered with Light & Fit yogurt. Hope this helps, and enjoy your holiday :)
BTW : I don't like fries, and most chips. Fatty food (except butter) makes me gag.. (I was liker that before RNY) . some foods make met so gassy - that I chose not to eat that...
If you want to bring some food with you - cold cuts, cheese cubes, veggies, etc. As chips I like Terra veggies chips. I made dips using avocado and salsa, and my friends love it. You cans make very nice dips using Greek yogurt .... (Use 2%).

How about cold cuts wrapped in fajita wraps or flat out wraps? I mix low fat cream cheese spread with salsa for a zesty spread with ham, turkey and roast beef all rolled together for a fajita club. You can make a lot, and stack them in a plastic box and store in ice chest. I also get the ranch flavored veggie chips which my husband and son loves. I will make my own trail mix so I can control the ingredients in them. You got the fruit and veggies covered. As for dessert, You could make chocolate cake mix (egg and water only) whoopie pies with S.F./F.F. cool whip mixed with strawberries and a few blue sugar sprinkles around the edges, pack them in plastic box and put in the ice chest too. These are light and wonderful and the kids get a big kick out of them, besides who doesn't love chocolate. No one would guess you are watching your weight with this feast! Thank all of you for such great ideas! Obviously planning is he key. If what I need to eat isn't there, meaning if I don't bring it, then I'll eat what is there. I'm on track right now and don't want to fall off the wagon again so I have to plan for my own success. Aren't I philosophic today!
Here is the desert I'm bringing. I got it from the hungry-girl web site.
Ice box cake
8 oz Cool Whip Free(thawed)
2 sugar-free vanilla pudding snacks with 60 calories or less each. (jell-o kind)
2 c canned peach slices packed in juice, drained. (I am using frozen, I couldn't find canned)
1/4 t cinnamon
18 low-fat honey graham crackers (4 1/2 sheets)
1 c rasberries
In large bowl, fold pudding into Cool Whip until uniform.
Place drained peach slices in a medium-large bowl and blot dry. Sprinkle with cinnamon, and toss to coat
Place 9 graham crackers in a single layer 9/5 loaf pan. Spread evenly with 1/3 of the Cool Whip mixture (about 1 cup).
Layer with half of the cinnamon peach slices and half of the reaberries. Cover with half of the remaining Cool Whip mixture (about 1 cup)
Layer with remaining 9 graham crackers, followed by remaining Cool Whip mixture. Finish layering with remaining cinnamon peach slices and resberries.
Refrigerate until graham crackers are soft, overnight or at least 6 hours.
Makes 6 servings.
