Good Morning! ..

So if you see the end of Friday's thread - you can see I fell off the back of the wagon pretty hard last night.   I never added my total at the end of the day, but I can say that it was right around 2100 calories for the day *cringe*.      Today will be MUCH better and I'll exercise in hopes that I'm not going to gain back the 3.2 pounds I lost earlier this week.

B:  AdvantEdge Choc Shake (110 cal) / Coffee with NonFat NonDairy Creamer and splenda. (10cal)

S: 6 Mini Ham/Veggie Quiche (143 cal)

Will repost rest later as I figure it out.

Weight at time of Surgery: 278.   Lowest Weight 178.   Current weight 187.0.  Goal: 160.

Zaudika, thanks for starting the thread and I hope your day continued on track. If you wouldn't mind sharing, I would love your recipe for the mini quiches . Tess, hope you're not hurting today.
Busy day but a good one. Finally in the low 60s, rain stopped, sun is shining, birds are singing. Enjoying time with my little ones after bath time. Hoping for a good night's sleep for all of us.

B protein coffee, Vitatop muffin
S Greek yogurt
L protein coffee
S high fiber low carb tortilla with egg salad ( 2 eggs, 1T mayo, mustard, lettuce)
D shrimp, sugar snap peas, ranch dressing
S Only at 905 calories so far so will probably have 1/2 an apple, 2 T peanut butter

Exercise: 45 minute Zumba Circuit class followed by an hour Zumba class
Fluids: 104 ounces so far
Challenge: trying to get the ticker I created on here!

I'd love to share! :)   Have you ever looked at Eggface's bites?  She has a TON of them and they're all amazing.  It's where I learned to make them and have just made up my own ingredients here and there. 

This is what I used for my current ones:

7 large eggs
1 cup 2% cheddar - finely shredded
1 cup mushrooms - finely chopped
1 cup spinach - chopped (I use the frozen in bag spinach and just measure out a cup while it's frozen - then let it defrost)
1/2 cup onion
1 cup ham  - finely chopped (I estimated this at about 5 ounces after it was chopped - the cup is loosely filled not packed)

Oven at 350 degrees.

Basically mix all the ingredients (except eggs) together in a large bowl.   Beat the eggs in a bowl and then add into the mixture.

The mix should be thick but wet.  As you're filling the mini-muffin tins you want to keep stirring the ingredients as the egg will try to settle onto the bottom.

Spray mini-muffin pans with pam.   Fill cups so they're level with the top.   Bake for approx 45 minutes - sometimes a bit less / more depending on ingredients.  

This recipe made 42 mini muffins.  24 calories and 2 protein each, no carbs!  :)

You can literally make up all KINDS of yummy things to put in them.   This week I'm doing a mock philly cheese-steak one! :)    It's made with lean roast beef (deli kind), cheese, onion, green pepper, mushrooms.  Mmmmmm! ..

Awesome, thank you!!! I'd completely forgotten about her website. Thank you both for the recipe and the reminder. I'll make some this afternoon. Nice break from hard boiled eggs and raw veggies.

My day is going excellent in sticking to my lower calories again.  Hooray! .. Plus I've drank about 80 oz of water today! WOO!

My Eats:

D: 1/4 cup brown rice with 1 cup beef and broccoli recipe made earlier this week.  (347 cal)

Cardio!!!!   Rode hard today in blistering FL heat.  My heart rate was high, my horse and I were both drenched in sweat.  We got an excellent work out doing dressage work trot/canter mostly for 45 mins and then jumping for about 15 mins.    Approx 320 calories burned.

Calories 1110 - 320 cardio = 720, Protein 94, Carbs 84

Good evening, BOTT friends,

 

Just posted, something happened and the post was gone before I could submit it.  Anyways, the gist was that I had too much turkey bacon today, but it's all good.  Still modified from high fat pork to turkey, so I can live with that, but still want to cut down just like I did the other processed meats I was eating.

Got my bike workout in for 35 mins, covering 3.7 miles followed by 25 mins of strength training for my arms.  Today I ate:

B:  5 strips turkey bacon, 1 egg and 1 egg white, apple slices

S:  1 oz natural almonds

L:  2 ozs lean beef burger with mustard (no bun), 2 strips turkey bacon, 1/2 c fresh strawberries

S: medium banana

D:  leftover homemade stir-fry chicken (no rice or noodles)

 

Horror movie night!  Goodnight friends :)
