Just a quick post of my food today...long day, no sleep last night.
B: protein bar
S: apple slices and 2 Laughing Cow cheese wedges
L: 6 ozs pork chop I don't always eat this much pork (had it for many meals over the last few days. But it was very lean, and very dense. Stays in my pouch a long time).
D: 6 oz turkey burger with 1 oz parmesan, mustard, 1 tbsp ketchup and 1 jalapeno stuffed olive
S: protein shake
I didn't get any vegetables in today. Not happy with that, but will compensate tomorrow. Sweet dreamzzzz!

The recipe was on AllRecipes.com and it was Pork Chops with Apples. It was only ok to me...I felt it needed less sweet potato or more apple. I also didn't use the chervil because I forgot to pick up some. I did a little improvisation with it and added some crushed pineapple to the mix, then basted the chops with pineapple juice and a little maple syrup after it was ready, then ran it under the broiler a couple minutes so it was sorta glazed.
The recipe was a video, with no ingredient list so I had to listen hard. It looked like they used 3 or 4 thick cut chops:
2 med apples
3 med sweet potatoes
1/4 cup chopped onions
4 slices bacon fried crisp and drain. leaving 1 tbsp fat
lemon juice
Peel and shred apples and sweet potatoes. Rub chops with lemon juice, season with salt and pepper to taste. Brown chops in bacon fat,
then drain excess fat and deglaze pan with bourbon (optional). Add onions, apples, and sweet potatoes. Cook 5 minutes. Add 1/4 tsp
salt, 1/8 tsp pepper, 1/8 tsp nutmeg and 1/4 tsp chervil to vegetable mixture. Transfer veg mixture to greased baking pan and put chops
on top. Add crumbled reserved bacon and parsley. Cover and bake at 350 degrees for 50-60 mins.
When I read the reviews, one person said she added brown sugar. It was better after adding the pineapple, but I doubt if I would make it again because it was a huge undertaking. I cooked enough to serve 8 people, then cooked my modified version (with olive oil instead of bacon fat, no bacon, and a tiny amt of maple syrup).
