Thursday, February 28th, Cardio & Cafe

Good Morning Botts:

 

It is the last day of the month of February and I am so ready to see March and Spring arrive.  I am ready to jump into March with a hop and a skip or maybe just a walk, but I am READY!!  My eats for today are:

 

Breakfast:  Coffee & Miralax

Snack:  Protein Shake

Lunch:  Quest Brownie Bar

Snack:  Protein Shake

Dinner:  Quest Brownie Bar

Snack:  Quest Brownie Bar

 

I did not weigh today, TOM and she is being mean.  I will wait until the weekend to get an official weight loss for this week.  I feel so much better since I have cleanse my system of unwanted carbs.  Weird, but my soul even feels lighter.

 

I hope each of you have a wonderful Thursday and remember to take your vitamins and drink your fluids.

There's just something about the promise of Spring that really does make your soul feel lighter. The sun is shining this morning and I feel like a million dollars. I believe there is sunshine in my Soul today. I've got my head back into the game and I'm ready to jump into the month of March with an unbeatable attitude. I have a plan for getting back on track and I CAN DO THIS!!!! Got my morning vitamins in and just brewed a fresh pitcher of decaf tea for the day. My walking shoes are under my desk and will be put to use for at least 30 minutes during my lunch hour today.

 

Commute:     Small coffee with Splenda and french vanilla creamer

Breakfast:      small coffee w/ spenda and ff french vanilla creamer   then a Protein Bar

snack:             Almonds and a string cheese

Lunch:            Mexican chicken   

snack:            fresh fruit

Dinner:           Veggie Omelet

 

Mexican chicken is so easy (and pouch friendly)...       

4 chicken breasts

1 package of taco or chili seasoning

1 can rotel tomatoes (or equal amount of salsa)

can of black beans or pinto (drained and rinsed) ---Optional

can of whole kernel corn  (drained) - Optional

throw it all in the crock pot and cook it on low for 8 hours or high for 4 hours. Take 2 forks and shred the chicken meat. Then serve in a multitude of ways ----- in a bowl by itself as a chili type entree. Over tortilla chips as Nachos. As a dip or in wraps as a burrito or soft taco. Very, very moist. The entire family loves it. Freezes and reheats wonderfully.

I love the Mexican Chicken Dish, we call it spicy chicken chili.  I went a few steps more an added a can of diced tomatoes with basil and oregano in it and a can of light red kidney beans.  It was awesome.  I am going to make this over the weekend, can't wait.  Thanks so much for sharing.  Let's rock March!!!!!

Thanks for the recipe that looks awesome. As you may have noticed I love anything with salsa, LOL. There's also a WW recipe for dip that's a can each of corn, black beans and salsa but this looks even better!

Good morning Tess and Botts:

I was siccckkkkkk yesterday and couldn't get out of bed! I couldn't eat or drin****il 9pm, and that was only a snack pack pudding and 1/2 orange.

Came into work today because I couldn't stand to stay in bed another moment, but I really should've stayed home because everyone is telling me I don't look too good. I feel so weak. But I will leave early today.

I really don't have much of an appetite but I couldn't stomach more than one cup of coffee, and now drinking tea.

Going to try to eat some oatmeal, and I will see what I can stomach throughout the day.

Have a great day all! Wishing for sun and warmth right about now!
